Roasted Pears with Caramel Sauce

These were super easy and tasty! My pears were really ripe so I decreased the brown sugar to 3/4 cup and also sprinkled some cinnamon down before adding the pears.

Blue Cornmeal Pancakes

These were REALLY good. Some people thought they were too salty, but usually recipes are too sweet for me. So I just left the measurements as is, and it was perfect. The only thing is I thought 2 Tbs. per pancake was a bit much. I don't know if it's because I didn't use a cast iron, but the first ones were too greasy. Haha, I almost added butter as a topping and then was like, "uuuuh, no!! I think we've had enough!" Anyways, I highly recommend!

Oatmeal Peanut Butter Cookies III

Tasty Tuna Burgers

This was really easy to work with. I left out the chili paste and worchestershire sauce, because I didn't have any. I only had plain bread crumbs, and don't think I would have liked the Italian. When I formed the patties I made sure my hands were coated with olive oil and they were easy to handle. I also didn't chill them for 30 min. Just threw them right on the skillet.

Vegetarian Sweet and Sour Meatballs

I made these without the sweet and sour sauce, and used them with regular spaghetti sauce. If you use italian bread crumbs, I wouldn't add the salt. These were a bit too salty for me, but they freeze well.

White Cheese Chicken Lasagna

I made this vegetarian style with 2 heads of broccoli and about a cup of sliced mushrooms. I also added an egg to the ricotta. My boyfriend and I really liked it and I will most likely make it again. I also used no boil lasagna noodles!

Butternut Squash Soup II

This is a great base recipe that you could mold to fit your desires. I went ahead and cubed the squash raw, and will probably end up baking it if I have time on the next go around. I used veggie broth instead of chicken. I wasn't able to add celery so I just doubled the carrot and also added about 2 tsp of ground sage. I'm sure you could add any herb/spice of your choice and it would be yummy.
