Strawberry Tapioca

I made this recipe as directed, except I added 2tsp of coconut sugar and let it chill completely before eating. It really is a good recipe! If you are looking at the negative reviews, just remember ~ this is not a traditional tapioca pudding! This is light and fruity and fresh. Perfect when strawberries are in season, I actually made this because I went strawberry picking yesterday and came home with 16lbs of strawberries so I am making strawberry EVERYTHING today! ;)

Berry Cornmeal Muffins

I made these for breakfast this morning and I love them! I used Cabot low-fat vanilla bean greek yogurt since that's what I had on hand and I think I'll always make them that way :) filling, not too sweet, and dense and moist!

Italian White Bean and Pancetta Soup

I halved the recipe since those in my household aren't really soup eaters (much to my dismay) and I have to say, I really like this soup! I will definitely make it again! I added a little more sage and pancetta, since I really like both, and topped it with Parmesan cheese. I skipped the parsley but I think I'll try it next time.

Brazilian Lemonade

I love this recipe! I love fresh juices, I don't even buy processed juice anymore. My kids (both picky!) gulp this down as fast as I can pour it. It is very refreshing on a summer day. We actually like it to wash down shortbread cookies fresh from the oven :oD

These are so easy and delicious! I usually make them in a 9" round pan, and bake at 300F for about 32 minutes. My favorite quick cookie!

Zesty Slow Cooker Chicken Barbecue

This sauce is great and very versatile. I used frozen meatballs instead of chicken and served the meatballs and sauce over white rice. A fast and tasty meal that my whole family loved.

Best Ever Muffins

This is a great versatile recipe. I made "pink princess muffins" this morning at my daughter's request, I diced a few strawberries and a mango, tossed them in 1T of sugar and added them, along with a little Wiltons pink gel foodcoloring to the batter and topped them with pink coarse sugar. I do agree with a few other reviews that you need to heat the oven to 425 and then lower it to 400 as soon as you put the muffins in, they only need about 20 minutes to bake and they turned out light, fluffy and delicious!

White Frosting

This recipe is very similar to one my husband's grandmother makes to frost red-velvet cake. Everyone in the family gets one for their birthday. It is sooooo much better than cream cheese frosting! If you want a really white frosting, use Wilton's clear vanilla extract. Be sure not to boil the milk/flour mixture for too long, otherwise your frosting will look like it has tapioca in it! (But it will still taste great!)

Banana Crumb Muffins

I love these muffins and so does my whole family! I always make at least a double batch, and they never last long. These are our favorite breakfast treat and I always make them for overnight company. A "must try"!!!
