Banana Cupcakes

I followed the recipe except used butter instead of shortening. Came out perfect. Tried one without frosting, it was a little chewy like a muffin. I frosted them with the Creamy chocolate frosting from this site. To us they tasted like little banana cakes with frosting, not true cupcakes.

Zucchini Beef Bake

We all really like this. I made it for two, using my own measurements. I still used 4C zucchini, about 3/4 beef, 1C rice, 2 garlic, 3/4 ricotta I added a can of rotel drained. For the seasoning I had to use dried, so I used half the amount listed, then added salt and pepper to taste. Mixed it all together and baked. Delicious!

Swedish Meatballs I

I had Costco meatballs in the fridge so I used them. As others suggested I used sourcream and canned mushrooms. Everyone loved, husband said it was the best and grandbaby said,"yum"

Cheese and Sausage Stuffed Zucchini

Followed as written...sorry no one liked it.I used mild Italian sausage and cut back on the cottage chesse. Tasted so bland. Eleven yr old wouldn't touch it. The rest will go in the garbage.

Spaghetti Pie III

Thought this turned out really good. We'll be having leftovers tomorrow and freezing the rest. For the jared sauce I used Bertolli, with tomato and basil Mezzetta with porcini, portabella mushrooms and Napa Valley merlot. I mixed one jar of the Bert. with 1/2 of the other. To that I added fresh garlic, onion, bellpepper and rosemery, dried basil, oregano, red pepper, a little bit of sugar and more salt and pepper. As others suggested I mixed the cheese with the pasta before adding the sauce on top. I also used some ricotta cheese in the mixture and mozzarella and cheddar on the top. To keep the foil from sticking and cut a piece of parchment paper to put on top, then put the foil on.

Cheddar Beef Enchiladas

My family loved these. The only thing I did different was to warm the tortillas on top of my gas cooktop first. Lay the tortilla directly on top of the burner grate after turning the heat to low. Just about 5 sec on each side will do it. I find it give them a better taste.

Pasta Pomodoro

This was fabulous, just what I've been looking for. I made the recipe as written. Then I thought why not add some cooked chicken. I then remembered that I had some small mozzarella balls, I cut them into fourths. I added both when I put the pasta in. Everyone loved it, Thanks!

Spicy Tomato Chutney

Love it ! Thanks for posting. For the curry paste, the store had green or red. I got the red and was a little worried it might be to hot, so I put in a little less. But I think I could have put the whole amount if not a little more in. I wasn't sure how long to simmer for, so it simmered for a half hour then I boiled it quickly for about 30sec and then put in the fridge. It was just right. Served it on Trader Joes Tandoori Garlic Naan bread.

Chicken Breasts With Herb Basting Sauce

I only had skinless, boneless chicken breasts. I mixed the herbs and oil in a bowl, then poured into a ziplock adding the chicken. Let it set for about an hour. I poured out all into a baking pan. I thought maybe I should add a little water. I did, then thought...why not some white wine and fresh sliced mushrooms. I also covered with aluminum foil. Turned out excellent!!

Cookie Dough for Ice Cream (Eggless)

I made this using the extra vanilla, milk instead of water and mini chocolate chips. I rolled it in plastic wrap and froze. Just before the ice cream was done I took it out of the freezer and sliced. Then each slice I cut into fourths. I returned it to the freezer on a paper plate. When the ice cream was done I then stirred the cookie dough in. Worked perfectly. I then returned the ice cream to the freezer and left it there for about an hour. Everyone loved.

Joey's Peanut Butter Cookies

These just turned out awesome. The batter was just right for making into the balls. I used creamy Skippy peanut butter. I cooked them in my convection oven at 350 for 10 minutes. Let then sit for about 2 minutes on the sheets, then removed to wire racks. Came out perfect!!

Cream Puff Cake

Thank You For Posting This!!!! OMG it saved me. I have made this before using another recipe. Sometimes it turned out and other times it didn't.(The pastry shell). Well I thought I'd make this for my dad's birthday tomorrow. I have found it tastes better made the day before. In my recipe when you were cooking the flour mixture you added the eggs and cooked.Also greased the pan. Well in the oven it started to puff up in just one spot then fell and it was all flat when done. So I went to this site and found this recipe. It's in the oven as I type. It is all puffed up. Yippie. I have never put a chocolate layer before the pudding. But I an planning to now. I have always put the Magic Shell on top and we've like it. I will add this to the middle too. Thanks again

Annie's Fruit Salsa and Cinnamon Chips

Very Yummie!!! I used, strawberries, mango, papaya, raspberries, kiwi and strawberry jam.I wanted to save time so I bought pita cinnamon chips. They were to hard I thought. Hopefuly next time I'll be able to make the chips.

Oklahoma Cheese Grits

Never having grits before I thought I'd try this at Easter. The outcome was everyone liked them, but I thought they would be better served right from the pot without baking. More like polenta. I threw the leftovers out.

Super Short Ribs

We all just love it!! I wasn't sure if I was suppose to add the juice of the pineapple, but I did. I also added the whole jar of chili sauce. Splashed some vinegar into it too. At the end of baking,I stirred in some cornstarch mixed with a little cold water. Served over white rice.
