White Chili I
Very good, and super quick. I use canned chicken breast in place of the cooked chicken. I used two 13 oz cans (the kind from Sams's Club). Went to make this and realized I didn't buy canellini beans! Had some navy beans, so I used those instead. I also used the 7 oz can of green chiles I had in the pantry, and a whole can of chicken broth. It was very good. My 6 year old asked for seconds, so it is a winner in my book.

Easy OREO Truffles
Yummy, and oh so easy. My six year old loved helping me make these. After crushing the cookies in the food processor, I added the cream cheese directly to the food processor. Chill in the bowl for 30 minutes. ONLY USE REAL CREAM CHEESE! Used a small cookie scoop to scoop them out, and then chilled again. The rolling in melted chocolate is messy and time consuming, but worth it! I made two batches for Christmas. The first using Peppermint Jo-Jos (Trader Joe's Oreos), melted semi sweet chocolate chips, and then drizzled with melted peppermint kisses. The next batch I made with Chocolate/Vanilla Jo-Jos, and covered in white chocolate, and sprinkled with red, white, and green nonpareils, and they were beautiful! I will make these every Christmas from now on!

Delicious Ham and Potato Soup
So easy if you use frozen southern hasbrowns, which are just diced potatoes, and frozen chopped onions. I rated it a four, because it is good, but I did not find it great. But it was quick and easy enough for a weeknight supper.
