Asian Coconut Rice

This came out really good! I had some toasted bits on the bottom of my pan but the rice didn't burn, which is a good thing! I added a pinch more sugar at the end but otherwise didn't change the recipe.

Spicy Grilled Chicken

This made for some tasty chicken! I marinated four chicken breasts halves all day, then grilled. Hubby liked it too!

Grilled Salmon I

Loved the flavor of this! Instead of sprinkling the fish with lemon pepper and garlic powder before marinating, I added lemon zest and 1 clove of minced garlic to the marinade. The fish marinated for about 4 hours but it could have definitely gone longer. YUM!

Orange Chicken Stir Fry

My hubby and I really loved this stir fry - I didn't take away any stars from the rating because I think it's all about the sauce! The only change we made there was add some ground ginger, but I know it would have been just as good without it. Instead of the bean sprouts and chow main noodles I used a bag of frozen stir fry veggie mix and brown rice - fabulous!

Caraway Rye Bread

This bread came out really good, I agree with others that more caraway seeds would make it better. Next time I will double the amount. I let the dough rise overnight in the refrigerator, then brought it to room temperature the next morning for it's second rise. I used this dough to make Reuben bread and it was fantastic!

Allspice Cream Cheese Frosting

With some modification, this frosting is great. I agree with other reviewers that you need a whole 8 oz block of cream cheese. I tried the frosting after using 3 oz and it was WAY too sweet (at least for my taste). The extra 5 oz made it wonderful. I also added 1/4 teaspoon more allspice and it still wasn't overpowering. I think I found my go-to cream cheese frosting recipe!

Beer Spice Cake

The flavor of this cake is outstanding! I cut the cloves back by 1/4 teaspoon but in the end, I think I could have used the whole teaspoon. I had to double this recipe to make enough to make two 9" rounds.

Jalapeno Chicken II

This..was..delicious! I didn't change the ingredients, but instead I changed how they were used. I marinated the chicken all day in Italian dressing like the recipe called for, but then combined the cream cheese, cooked/crumbled bacon, and sliced jalapeños together and spread it on the chicken breasts. I rolled them and grilled to get a nice char, then finished them in the oven. WOW! You could do so many different combinations with the cream cheese. This recipe is definitely a keeper!

Chicken and Biscuit Casserole

The flavor was great! I used all the ingredients listed but just finished it differently. Instead of baking with the biscuits in the oven, I just let it simmer lightly on the stove after putting the chicken in and baked the biscuits separately. YUM!

Chocolate Chip Banana Muffins

I made some small changes to this but I think the main recipe would have been equally as good! I subbed brown sugar, sour cream for yogurt, and nuts for the chocolate chips. I also added about 1/2 tsp of cinnamon. These were great and moist!

Mini Meatloaves

These came out so good! I bet they would have been even better if I had quick oats, I used the larger variety and they didn't really absorb into the mixture as well. I used a large muffin tin and made 4 bigger meatloaves. Will add this to my rotation!

Ham and Potatoes Au Gratin

This tasted great! I thought the ratio of potatoes to sauce was off, so I doubled the amount of sliced potatoes and it was perfect. I also diced 1/4 of a large onion and sautéed with butter before adding the flour. Reminds me of my Mom's scalloped potatoes. Yum!

Caramel Apple Bars II

This was good! I took other reviewers advice and cut the sugar back to 1 cup but with a tart apple I think you could use the whole amount and they would be great. I also used margarine because I didn't have butter - I don't think that made much of a difference. Will definitely make these again!

Szechwan Shrimp

I made a few changes - tripled the sauce and added chicken and broccoli because I didn't have enough shrimp. The sauce was really tasty but next time I might add some orange zest for some brightness - otherwise I wouldn't change a thing. I served this over brown rice. Never need to call for Chinese take-out again!

Hot Spiced Cranberry Cider

Awesome recipe! I didn't want an overpowering lemon taste so I just cut the lemon in half and stuck the cloves into the zest of the lemon halves. I made this a hot toddy by adding some Bacardi rum!
