Mushroom Chicken Parmesan

OMG! This is delicious! And so easy too! I absolutely loved this. I did, however, make just a couple changes. Instead of flour I used Italian breadcrumbs with some added seasoning which I then cooked for about 1-2 minutes, til slightly browned, on each side in EVOO in a pan...I was worried that if I only used flour it would fall off. Everything else I did the same, with about 1 Tablespoon minced garlic in the baking pan as well.

Easy Focaccia

This is great! I added some garlic into the dough like several reviews suggested. I didn't have fresh rosemary so I used 2 tsp dried instead and added some fresh basil as well. It was awesome! I will definately be making this again...and it truly is easy!

Teriyaki Chicken

Delicious! I took the advice of others and used half white sugar and half brown sugar, and added about 1 Tablespoon lemon juice. I also used two big chicken breasts instead of a whole chicken. I cut the chicken into strips and cooked in a saucepan (only took about 10 minutes). I made it into a teriyaki bowl- rice, with stir fried veggies on top, then the chicken. I used the leftover marinade to make a sauce which I poured over everything, then sprinkled on some roasted sesame seeds. Everyone loved it...even my 3 year old!

Peachy Keen Smoothie

This recipe was pretty good. I followed it exactly the first time, then made it again with half milk and half vanilla soy milk, plus more ice. With the soy milk alone, I felt like it overpowered all the other flavors (but that could be since I'm not too big on soy milk). But it was still a good recipe =)

Luscious Eggnog

MMMM so good! I thought this was delicous, however my boyfriend didn't like it and refused to drink any after trying a sip (he said it just tasted like sweet milk) To try and make it more pleasing for him I mixed in about 1/2 tsp allspice and nutmeg, but it still didn't work. I followed the tempering instruction by Sher1950 and got no bits of cooked eggs. This still gets 5 stars from me, despite what my crazy boyfriend thinks =P

Easy Corn Chowder I

This was a good, easy recipe. I would have given it 5 stars, it tasted really good, but it ended up being more like potato soup than corn chowder. I added about 1 1/2 cups sharp cheddar cheese to make it cheesy. Next time I will add a can, or even two, of corn to make it more like corn chowder.

I thought this was just okay...it was just kinda bland to me, but maybe it was something I did. Next time I think I will pound the chicken first and maybe add more garlic.

Chive Cucumber Salad

I didn't care for this too much but my boyfriend liked it. It looked really good and sounded like it would be good, but it didn't come out that way for me. It was a little too watery and, in my opinion, only needed about 1 tbsp vinegar.

Raspberry Lemon Muffins

These muffins were great! I don't really care for rasberries but these muffins were sooo good. Rasberry and lemon go together perfectly. Lemons were really expensive so I used bottled lemon juice, no lemon zest, and 1 tsp lemon extract. I followed suggestions of others and used rasberry yogurt instead of plain, plus used 3 cups fresh rasberries.

Spicy Korean Red Pepper Cucumbers

This was awesome! Cucumber kimchi is my favorite! I already had toasted sesame seeds so I skipped the first step. I also used apple cider vinegar instead because that is what my mom always uses when she cooks Korean food and added a pinch of sugar, or "sweetness" as my mom calls it. It was very easy to make and really tastes like the real thing! **I just wanted to say that kochujong isn't really a hot sauce, it is hot pepper paste...just thought this might help people who are looking for it

Ma Ma's Sugar Cookies

These cookies were great! Even my boyfriend, who only likes (err, or should I say liked) store bought sugar cookies loved these. I didn't have any butter flavored shortening so I used regular shortening and added about 2 tablespoons of butter =P

Lasagna Roll Ups

This lasagna is awesome! I used fresh spinach, ground beef instead of tofu (I made the mistake of telling my boyfriend about it before I started cooking), and added some sliced mushrooms. This took two 13X9 inch baking dishes. EVERYONE couldn't stop talking about how good it was.
