French Bread

Followed someone else's advice and threw ice cubes in the bottom of the oven just after I put the bread in the oven. It made the crust really crunchy with a nice chewy middle. Very good. I'm using it in a French toast casserole too.

Meatloaf Muffins

These were great. I didn't have all the ingrediants so I used on pkg. of Lipton's Beefy Onion soup mix, 3/4 C water and a head or roasted garlic from last night. They smelled great while cooking and the flavor is not bad at all. I did frost them with mashed potatoes and sprinkled cooked corn on the top. I tried putting a piece of cheese in a couple but it melted and seeped out so next time I'll try a chunk of cheese instead of a quartered cheese slice. Can't wait to pack them in my lunch tomorrow!

Buffalo Chicken Wings II

These were great and so easy to make. I defrosted them and mixed up all the ingrediants and baked them in my confection toaster oven for the full 45 minutes. Really, really good.

Bacon Wrapped Pork Chops in Zesty Sauce

I wrapped these completely in bacon and browned them in the skillet for 4 min each side. (Disconnet smoke alarm) Simmered them for 1 hour in a combination of BARBQ sauce, Pineapple juice with chunks and a can of diced tomatoes with green chilies. Flipped them after 30 minutes. They smell great and I'm sure they will be. They are.

New Orleans Barbeque Shrimp

Instead of beer I used white wine. Also added two Roma tomatoes chopped up. Served it over thin spaghetti with fresh bread. Wonderful and froze really well. I just ate a frozen batch tonight.

Individual Egg Bakes

This recipe can be changed to you heart's content. I sometimes put a slice of ham in the bottom of a ramikin, a scoop of salsa, the egg, a dash of milk and butter and sprinkle a little cheese on top. Delicious.

Eggless Ginger Cookies

Pretty good. I baked them for 7 minutes. I didn't roll them out, just spooned on to sheet and flattened with a glass. Not as pretty as the picture but not bad tasting at all.

Crunchy Whole Wheat Cookies

These were fabulous! I followed the recipe but added a tsp of ginger to the mix. I used Smart Balance instead of margerine or butter and Canola Oil for the shortning. Pretty darn healthy considering they taste that good. According to the red lines...I can't spell at all.

Absolute Best Liver and Onions

This was excellent. The only thing I did different was to add 2 C of beef broth to the skillet, covered and simmered for 15 minutes. So darn good!!

Dale's Swedish Meatballs

Good. I used home made bread crumbs and regular strong coffee. The sauce was nice and thick and it just a little bit bland. Not sure I'll put in next time to enhance the flavor.

Baked Shrimp with Feta and Tomato

It tastes good, but I wish I'd have read the reviews before I started. I would have cooked the shrimp less. I didn't get any Orzo, but I put it over Jasmine rice, and it was just fine. Served it with Stouffer's creamed spinach. Oh, I cooked it at 350 for 10 minutes and then broiled for 5 more minutes. I also had sprinkled a little Parmasan cheese on it before cooking. The feta did brown after all.
