Chicken Livers with Bacon

Very good. Pretty rich, you really can't eat more than a few. I'll cook the bacon a bit first next time.

Fish In A Vegetable Patch

Very good. I marinated it for 5 hours. It was just a little bit too sweet for me. Next time I'll use less sugar. There will be a next time.

Kimberly's Meaty Meatloaf

It was way too dry. Way too many bread crumbs. I wanted a meatloaf that didn't fall apart but this is ridiculous! It's a solid little sucker. Ha.

Cinnamon Sugar Butter Cookies II

These were wonderful. I halved the recipe and ate all but two of the cookies in one night. I actually got up in the middle of the night and ate a few more. I may make more tonight. Thanks.

Layered Chicken and Black Bean Enchilada Casserole

Looks and tastes great but like others I added corn to the black bean/chicken mix. Also I made my own Tomatilla sauce and used that instead of the Enchilada sauce. I also didn't add the green chilies after I tasted the Tomatilla sauce with the two Serrano peppers. I made my casserole for 16 people. Very good.

Bacon Wrapped Barbeque Shrimp

These were fabulous. Even though I used jumbo wild shrimp the bacon didn't cook enough for me. Next time I'll pre-cook the bacon a little bit first.

Bread Machine Bagels

Never made bagels before. Lot's of work but oh so worth it. I put dried onion and dried parsley in the dough and then followed the rest of the directions and sprinkled more dried onion on the egg washed bagels.

French Bread

Followed someone else's advice and threw ice cubes in the bottom of the oven just after I put the bread in the oven. It made the crust really crunchy with a nice chewy middle. Very good. I'm using it in a French toast casserole too.

Scalloped Potatoes and Onions

Made them again tonight but scaled it to 4 servings, added sliced carrots and celery to the mix and a few slices of processed cheese. Did everything else as the recipe called for. Cooking at 360 (toaster oven) for 1 hour. We'll see how that works and put it in for longer without the foil if necessary. I really wanted to use the fresh vegetables I had on hand instead of discarding them at the end of the week.

Individual Egg Bakes

This recipe can be changed to you heart's content. I sometimes put a slice of ham in the bottom of a ramikin, a scoop of salsa, the egg, a dash of milk and butter and sprinkle a little cheese on top. Delicious.

White Bean 'n' Ham Soup

Great but of course, I had to add to it. I added celery in with the carrots and onions, worchestershire, galric, smoke flavoring, and I used a can of Rotel mild chilies and tomatoes. Vegetable broth instead of the 2 cups of water and cooked it all together for 2 hours like some other's did.

This was OK. I used a lemon pudding cake mix but cooked it in a round spring form pan. Had to cook it a little longer to get done in the middle.

Simple But Awesome Lemon Pepper Pork Chops

This was just OK. My chops came out dry but it could be because my oven's not working correctly and cooked them at 450 instead of 400. I'll reseve judgement until next time....
