Country Apple Dumplings

I LOVE how simple this recipe is! I don't like the sugar substitute taste of "diet" products, but we used diet Mountain Dew with reduced-fat dough and nobody could even tell the difference...even the men :)

Pecan Pumpkin Dessert

I took these to work yesterday, and everyone raved about them!! I'm having to share the recipe today :) No changes or substitutions necessary in my opinion (although I did use fat-free cream cheese and low-fat whipped cream to decrease the calorie content). Also, before topping the dessert, I cut small pieces and placed them in cupcake paper cups and then frosted them.

Colorful Vegetable Fajitas

I followed the advice of many other reviewers and added my salsa as a topping (not mixed in the cooking process). I added avacado to the fajitas...great recipe, and you definitely don't miss the meat!

Slow-Cooker Posole

This recipe calls for WAY too much water. The flavoring was good, but definitely watered down. Not sure that I would make it again; surprised at how it turned out since the reviews were so good.

Chocolate Covered Cherry Cookies II

These were a big hit at work! I did what other reviewers suggested and added a little cherry juice to the cookie batter. I also halved the frosting recipe and still had quite a bit leftover (I pipped the frosting like the picture shows). The only adjustment I will make next time is adding more cherry juice to the cookie batter. Great recipe!

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made these into lemon-filled cupcakes...yum! The lemon filling is SUPER lemony. I made the frosting without the lemon zest and juice; instead, added some of the lemon filling to the frosting for adequate lemon flavoring. I will definitely make these again but with a little less lemon juice in the filling next time.

Toasted Pumpkin Seeds

Pumpkin Whoopie Pies

I used a different recipe for the filling (using marshmallow cream) but the whoppie pies were one of the most raved-about desserts at work. The only change I would make for next time is forming them a little larger. Honestly, one of the best recipes I've ever made!

I made this dish not straying very far from the original recipe. I thought it was delicious and my sister and brother-in-law (both picky eaters) loved it as well! I will definitely be making this again.

Pot Stickers (Chinese Dumplings)

Yummy! I cut the recipe in half and had plenty of leftovers to freeze for later use. A few minor modifications I made for a healthier version: baked at 425F for 10 minutes instead of frying; substituted ground turkey for the ground beef. I will definitely make these again!

Baked Salmon II

I made this recipe exactly as it is written. The only change I would make next time is to decrease the amount of dried basil - it was a bit overpowering. Great recipe though!
