Reviewed: Nov. 20, 2012
Made triple recipe to frost 2 layer 8" round. Was a little dry so I will add a little milk next time. Excellent semi-sweet choc flavor.

Used frozen stir fry veggies. Did not see a need to double sauce. Did add extra hot sauce for flavor.

I added corn and some red pepper for kick. Otherwise too bland. Loved the rich tomato flavor.

Needed more bulk so I added black beans and shredded chicken and less velveeta. It was really good then.

Zucchini Soup I

Reviewed: Jul. 30, 2010
Excellent flavor. I used about 12 c of zucchini. Made this without the potato flakes. Was very thick. I am freezing it without the milk and will add that when I thaw it.

Used 1 1/2 c evap, skim milk for cream and milk. I left the skins on the potato for nutrition. I added chicken cubes and some garlic. Excellent. Next time I will try it with broccoli.

Very good. A nice change. A little wet when done. Use a slotted spoon to serve. I would mix it up before serving.

Chocolate Banana Bread

Very good. The choc. chips make it more of a dessert. You could just leave them out and let the cocoa powder add a subtle taste. I like it both ways.

Pineapple Ham and Rice

I would cut the pepper in half. It was too strong. I would add additional veggies for less starch. Otherwise, it was wonderful.

I used chopped, sauteed onions. This made a lot more than I expected. I used a mix of cheeses. Very good.

Peanut Butter Vegetable Chicken Soup

Fantastic. (I used low fat PB and found no difference). My family and friends loved it. Can't tell its PB if you don't know. Sauteed the onion and celery first for flavor. Used frozen broccoli.

Fresh Tomato Shrimp Pasta

Reviewed: Mar. 25, 2009
Wonderful flavor. This is a real keeper. I used 16 oz can tomatoes, 2 c. fresh spinach, shredded Mozz, dried herbs, and about 1/2 of the pasta. Very different from the typical alfredo or olive oil/butter base. Was amazing!

Petite Sausage Quiches

Reviewed: Mar. 25, 2009
Excellent-loved by all- I made 1/2 of the crust and filling recipe and the full amount of milk/egg mixture. This filled 36 mini muffin cups. I rolled out the dough and cit it with a biscuit cutter for more even and faster crusts. Try skim evaporated milk instead of the half and half. Can't tell the difference.
