Simple Whole Wheat Bread

time consuming, but SO worth it! substituted applesauce at the beginning for butter and added 1 cup oats. lasted in a ziploc bag on the counter for over a week and makes delicious pb and honey/jam sandwiches, french toast, or just plain toast.

Spinach and Tortellini Salad

My older sister makes a delicious tortellini salad that I wanted to recreate using spinach to get rid of it before it went bad and this is the AMAZINGLY HUGE hit that I came up with. I added 1 can artichoke hearts, salami (but sausage would've worked great too), I used I can canned tomatoes (would've preferred sund-dried tomatoes, but they're wayy too expensive), and I made sure to use a good chunky italien dressing. The taste of this is SO flavorful and refreshingly light and delicious. This was such a huge hit with my finace who has been raised on high fat, high sugar meals his entire life. Keeps well--excellent for picnics or make a big batch and use for a fresher lunch option throughout the week.

Double Quick Dinner Rolls

I had trouble with these rising, but I'm pretty much positive thats my fault-next time I'll measure out the yeast perfectly instead of just throwing in a pre-measured packet. Other than that I wanted healthier/less elaborate rolls that would go better with my dinner so I replaced the potato flakes with oatmeal, subsituted the white sgr with brn, replaced the veg oil with applesauce, omitted the onion powder, and replaced one cup flour with wheat flour. Despite my touble with these rising they turned out AMAZING. I couldn't believe how well they turned out despite everything. They were sweeter than I expected and my guests left asking for more. Suprisingly light and very complimentary to any dinner dish-will become my go-to for dinner rolls!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Taking some advice from reviewers and working with what I had on hand I added 1/2 c oats (since I only had 2 bananas), reduced the cinnamon to 1/2 tbs, added 1/4 tsp nutmeg, replaced the applesauce with plain yogurt, and replaced the veg oil with applesauce. I also made sure to mash the strawberries. These were SO INCREDIBLY AMAZING. The texture was perfect, lighter than I expected and they were amazingly moist. The kept their moisture extremely well and if they hadn't been such a hit with the finace and rommates I'm sure they would've stayed that way regardless of where I kept them for at least a week. Throwing texture aside the taste of these was enough to make me a fan for life. (Although for those avoiding sugar I could see reducing the sugar just a tad-they'd still be fantastical) Delicious, filling, healthy, and quick to make!...what more could you ask for?
