Green Chicken Enchilada

Reviewed: Feb. 15, 2012
I would have rated these a five star, but followed recommendations of others on here. Used a rotisserie chicken cooked, mixed with pepper jack cheese and hot pepper cheese (for more kick), added cumin, garlic salt, pepper and also mixed in half the cheese and sauce. Then I filled the corn tortillas with the mix, added sauce and cheese on top. Cooked 30 minutes. This was wonderful. I usually use creamed soup and sour cream, but this was way better. I topped it off with a dab of sour cream and chopped tomatoes. Wonderful!!

Bacon Wrapped Hamburgers

Reviewed: Jan. 6, 2012
Very good. I try not to change much, but I don't use hamburger only turkey. It's generally drier because of low fat content but adding this recipe....it is moist and very good. Will use again.

Guacamole

Very good recipe. The only thing I changed is I added jalepenos because I did not have any ceyenne pepper.

Hot Artichoke Spinach Dip

Reviewed: Aug. 27, 2008
I did use cream cheese instead because I didn't have any cream. I wasn't impressed with this right out of the oven, but it was much better the next day. I agree that it's a bit dry for me and maybe I will try milk next time. Also, I used marinated hearts and didn't care much for that strong taste.

This alfredo was very good. I used Chicken because I didn't have shrimp. I also used a suggestion to add 1/3 c. cream cheese and it was perfect!! Will use them many time over.

Coconut Tilapia with Apricot Dipping Sauce

Reviewed: Jun. 7, 2008
This recipe is pretty good! I love coconut shrimp so I used shrimp instead of fish and it was good. I'll be making this again...maybe I'll try the fish next time.

Cashew Chicken with Water Chestnuts

Reviewed: Jun. 7, 2008
This recipe is pretty good. I am not a fan of Chinese food, but the family liked it. I did not add bell pepper and I think it needs less onion. Good recipe!!

Stuffed and Wrapped Chicken Breast

Reviewed: Jun. 2, 2008
This was wonderful!! I did cut the bacon up into small pieces and mix it with the cream cheese. It was a little rich for me and will not fill it so much next time, but this is really good!! I forgot to add that I also used the cream cheese mix and stuffed jalepenos and cooked them in the oven with the chicken.
