Loaded Potatoes

These potatoes are amazing. I fix mine a bit different. I start by microwaving them for about 6-7 minutes to get them started cooking, let cool a little and then slice, drizzle with butter (mixed with a little EVOO) and top with the rest of ingredients. Bake, uncovered at about 400 for 20-30 minutes to finish them off. Fantastic!! (In my opinion, the rosemary is a definate must)

Crescent Bacon-Cheddar Pinwheels

Mmmmm! These are great with more cheese and bacon. I used chive & onion cream cheese instead of ranch and just spread a thin layer on. It probably amounted to 3-4 TBSP (I didnt measure) Went soo well with our cheesy potato soup at lunch today!! Definitely stick in the freezer for 15 or so minutes prior to attempting to slice! This one's a keeper!

Breakfast Link Bake

This recipe wasn't horrible, but a little plain for my family's taste. We thought it tasted mostly of hashbrowns with a little cheese on top- maybe it would be better with less hashbrowns, more cheese and some chopped peppers. We used Jimmy Dean sausage links, and that was the best part of the whole dish. Probably won't make this one again, just not enough flavor.

Roasted Pumpkin Seeds

Wild Rice Turkey Dish

So, So good. Simmered 1 cup wild rice blend in 2 cups chicken broth 50+min. in place of box rice (didn't have any) Added 1 stalk celery, 4 chopped baby carrots, 1/3 cup chopped onion, 1 small can mushrooms (all sauteed in 4 TBSP butter) and 1 cup steamed broccoli. Omitted water chestnuts. Also threw in a large 'pinch' of shredded monterey jack. Upped the water to 1 cup. Baked, covered loosely with foil 30 minutes, uncovered and baked another 15 min. For the topping I used 1 cup plain bread crumbs + 1/3 cup Italian bread crumbs mixed with 4 tbsp melted butter & a little shredded cheddar. Baked for another 10 minutes. Delish! Aside from Sheppard's pie-the best way to use Thanksgiving leftovers! And very versatile--use whatever veggies you like, or none! :D Will make again!!!

Nacho Cheese Sauce

Great recipe! Had to stir in a little more milk at the end to thin it a little, otherwise, didn't change a thing. Also, it took more like 15 minutes, not 25. Will definitely use again!!

Frosted Banana Bars

WOW!! I have made these bars twice and they turned out excellent both times. Brought them to work yesterday and received so many compliments; everyone loved them. I brought home an empty pan and barely got to taste them for myself!!I do add 1 tsp cinnamon as suggested by some reviewers as well as Cream Cheese II frosting recipe on this site, then top with chopped walnuts. I also use the jelly roll pan, not a 9X13. These are by far the best banana bars I've ever tasted!!!

Oven-Baked Caramel French Toast

This was really sweet and really good!! Served it with sliced bananas. The changes that I made were: 5 eggs, 3/4 c. skim milk and 14 slices cinnamon bread cut into bite sized pieces. I baked it in a glass pyrex dish and did not have a problem with it burning as some other reviewers did.

A to Z Everything-but-the-Kitchen-Sink Chocolate Chip Cookies

Everybody loved these cookies. I did not have mace, so used nutmeg instead as per other reviews. Also used chopped pecans instead of walnuts since that's all I had. I halved the batter and stirred in chocolate chips and M&Ms in one half and in the other used craisens and white chocolate chips. The latter was my favorite by far, but of course the kids preferred the choc. chips and M&Ms. GREAT RECIPE!

Baked Parmesan Perch

Really good! Tried this with perch from one of our local lakse :) Used Panko instead of bread crumbs, but added Italian bread crumbs (?1/4 cup) Doubled the panko & parm cheese. Added couple generous shakes of lemon pepper, dash of onion powder, dash of garlic salt. Also melted about 4 TB Butter and dredged all the fish into it to coat well prior to dredging through the crumb mixture. Had a little left over, so I tried Imitation Crab as well. That was Even BETTER Than the fish, but should have been baked a little less!! Baked at 450 for 10 min (filets were on the small side) Then turned up to 500 for 2 minutes to get them good and crispy. Didn't burn at all and were done perfectly! Next time I might add a little salt and sub the butter for something more healthy-otherwise LOVED IT! Will make this again!

Pecan Turtle Bars

Not sure what I did wrong-maybe didn't bake long enough, but my chocolate chips melted right into my caramel. Wound up like fudge consistency. I did as others suggested and doubled caramel mixture as well as using 2c. flour in shorbread layer. ???

Mijo's Slow Cooker Shredded Beef

Hmm... I followed the recipe exactly, except for decreasing the hot sauce to 1 1/2 Tbsp. and used only one jalepeno pepper and this was still a quite a bit too hot for our taste. Cooked this all day (10+ hours) on low and still was not pull apart tender, actually was quite tough. I haven't had this problem with cooking a roast in a crock all day before. Never-the-less we used the meat (cut into chunks) on burritos loaded with sour cream and cheese to kill some of the heat and it was palateable. Probably won't try this one again.
