Smoky Chicken Spread

Reviewed: Jun. 30, 2009
Excellent! I was worried the smoky flavor would be a bit much, but not at all! Only mildly smoky. Love this recipe!

Frosted Banana Bars

Reviewed: Jan. 29, 2009
WOW!! I have made these bars twice and they turned out excellent both times. Brought them to work yesterday and received so many compliments; everyone loved them. I brought home an empty pan and barely got to taste them for myself!!I do add 1 tsp cinnamon as suggested by some reviewers as well as Cream Cheese II frosting recipe on this site, then top with chopped walnuts. I also use the jelly roll pan, not a 9X13. These are by far the best banana bars I've ever tasted!!!

Pecan Turtle Bars

Reviewed: Jan. 29, 2009
Not sure what I did wrong-maybe didn't bake long enough, but my chocolate chips melted right into my caramel. Wound up like fudge consistency. I did as others suggested and doubled caramel mixture as well as using 2c. flour in shorbread layer. ???

Mijo's Slow Cooker Shredded Beef

Reviewed: Sep. 3, 2008
Hmm... I followed the recipe exactly, except for decreasing the hot sauce to 1 1/2 Tbsp. and used only one jalepeno pepper and this was still a quite a bit too hot for our taste. Cooked this all day (10+ hours) on low and still was not pull apart tender, actually was quite tough. I haven't had this problem with cooking a roast in a crock all day before. Never-the-less we used the meat (cut into chunks) on burritos loaded with sour cream and cheese to kill some of the heat and it was palateable. Probably won't try this one again.

Oven-Baked Caramel French Toast

Reviewed: Sep. 3, 2008
This was really sweet and really good!! Served it with sliced bananas. The changes that I made were: 5 eggs, 3/4 c. skim milk and 14 slices cinnamon bread cut into bite sized pieces. I baked it in a glass pyrex dish and did not have a problem with it burning as some other reviewers did.

Loaded Potatoes

Reviewed: Aug. 21, 2008
These potatoes are amazing. I fix mine a bit different. I start by microwaving them for about 6-7 minutes to get them started cooking, let cool a little and then slice, drizzle with butter (mixed with a little EVOO) and top with the rest of ingredients. Bake, uncovered at about 400 for 20-30 minutes to finish them off. Fantastic!! (In my opinion, the rosemary is a definate must)

Grilled Salmon I

Reviewed: Aug. 19, 2008
Despite only having about one hour to marinate, the salmon turned out great on the gas grill!! Great, simple recipe.

Slow-Cooker Barbecue Ribs

Reviewed: Aug. 19, 2008
Used this recipe for beef short ribs. Followed exactly except seasoned the ribs with s&p and then browned them in the oven for 30 minutes each side. The meat was very tender and flavorful.

A to Z Everything-but-the-Kitchen-Sink Chocolate Chip Cookies

Reviewed: Aug. 19, 2008
Everybody loved these cookies. I did not have mace, so used nutmeg instead as per other reviews. Also used chopped pecans instead of walnuts since that's all I had. I halved the batter and stirred in chocolate chips and M&Ms in one half and in the other used craisens and white chocolate chips. The latter was my favorite by far, but of course the kids preferred the choc. chips and M&Ms. GREAT RECIPE!

Grilled Sausage with Potatoes and Green Beans

Reviewed: Aug. 19, 2008
Good recipe. I doubled the oil/butter and seasonings (+ red pepper flakes, fresh parsley and fresh oregano), then tossed all together before putting in foil and added the water. I used fresh potatoes, green beans, carrots and onions straight from the garden. YUM!! I think red pepper strips would be a great addition.

Nacho Chicken Casserole

Reviewed: Aug. 19, 2008
Good flavor, very poor texture. Came out more like a nacho chicken dip than a casserole. The chips turned into mush and offered no crunch. I used taco seasoning to spice up the flavor which did a good job. This one I won't make again!

Peanut Butter Bars I

Reviewed: Jul. 15, 2008
Very good--they do taste like pnb cups! Make sure you serve them immediatly out of the fridge as they soften really quickly. (TIP: NOT good for cookouts!!!) Otherwise a really yummy treat--kids love 'em!

Chicken and Bacon Shish Kabobs

Reviewed: Jul. 15, 2008
These were very good. I also doubled the marinade and basted the kabobs liberally and often while grilling them. I did pre-cook the bacon on the stovetop for about 5 minutes. The only problem I had was getting the bacon to stay wrapped around the chicken while grilling. Next time I won't use the thick sliced bacon and probably won't cut the slices in half.

Southwest Summer Pork Chops

Reviewed: Jul. 15, 2008
These were pretty good...definately a strong "southwestern" flavor. My family thought they tasted like taco meat. I used fresh minced garlic and fresh minced oregano and only marinated about 1 hour, but still had strong flavor.

Elaine's Sweet and Tangy Loose Beef BBQ

Reviewed: Jul. 8, 2008
I also found that my (small-about 3 lb.)roast had to cook several hours longer to become easy to shred. After about 4 hours, I took it out of the crock, cut into smaller pieces and returned to crock with the sauce. I let it cook on low for about 2-3 more hours before I could shred the meat easily, then returned to the crock until mealtime. The meat was delicious, definately sweet and tangy. Thank goodness I had the whole day to cook it though!

Thought there was a bit too much bread in this recipe, otherwise was pretty good. The buttery, crispy topping was Really Yummy!

Grilled Rib Eye Steaks

Reviewed: Jun. 29, 2008
Flavorful and tasty. Used this on sirloin strip steak. Wasn't quite as tender as I had hoped, but I could have marinated longer. Will use this one again, though.

Wild Rice and Beef Casserole

I thought this dish was OK, my family did not care for it at all. Needed more flavor and probably a can of cream soup.

Guy Approved Meatloaf

Reviewed: Jun. 29, 2008
Didn't care for this dish. The liquid smoke was the only flavor that came through. I will stick to my regular recipe with a homemade BBQ glaze on top.
