Creamy Blueberry Pie

Delicious! Sour cream in a pie...who knew!? Bit sweet... Could have done with less sugar. Otherwise, perfect!

Too Much Chocolate Cake

Pretty good... I think I ended up baking it for an hour and 20 minutes. Next time I may try with less oil as some have suggested. I also baked in an convection oven at 325, still ended crispy on the outside and a toothpick never came out clean. Still tasted good!!!

Yummy Yam Casserole

I followed the recipe exactly. First time I've ever made yams. I would be tempted to add more pecans next time, just because I love pecans. This dish was awesome. I didn't even cook it for thanksgiving... I made it since yams are so good for you. This was almost like a dessert, like a pumpkin pie filling, but not quite that sweet. Not quite as good the second day, but awesome right out of the oven! Everyone loved it!

Mussels Mariniere

The sauce was very good. I accidentally forgot to cover the mussels while cooking so them, which could be why some turned out a bit mushy and some were perfect. I think I'll have to find a better fish market or stick to eating them at restaurants!

Oatmeal Pancake

A really tasty pancake! I'm not on the South Beach diet, but thought I'd try it out since it looked so healthy. The cinnamon and nutmeg make it so nice that some wont even need syrup. And for those who aren't fans of cottage cheese, you barely taste it! (Actually I couldn't taste it at all!)

Blackberry Spinach Salad

Very tasty! I loved everything about it. I could only get frozen mixed berries since blackberries aren't exactly in season here in January. I'm sure fresh ones would have been much better. It was fine dry but a balsamic vinegar would have been an excellent balance for the alkaline in the spinach.

Fresh Spinach Salad

I used turkey bacon instead of pork bacon to make this a lot less fatty and it was great. The dressing's a bit sweet, I'll probably use less sugar in it next time. Otherwise it was great!

Asian Chicken Noodle Soup

A very good, very simple recipe! I didn't use green onions because I forgot to pick them up! The recipe says to use one can of 14 oz broth, but I used 2 since the cans I got were about 10 oz each. It also didn't seem like there was enough broth anyway. I was scared of the mushrooms since I've never cooked with them before, but they were delicious. Same with the eggs in the recipe. Someone else said they left it out because it was "weird," but trying new things is whole fun of cooking! An analogy would be like trying on clothes, things on the rack might look great on you!

Baked Salmon II

I actually didn't think that this would be that great since the ingredients were so basic. But it's awesome! It reminds me of that garlic-broiled shrimp that you get at Red Lobster (etc). Sooo good!!!
