Pork Tenderloins with Roasted Potatoes

This was awesome, and so easy!! I wanted to use 5 potatoes instead of 2, so I doubled the marinade and divided it into 2 bags. Roasting for 25 minutes then broiling for 5 was perfect (as long as your potatoes aren't cut too large). I did need to add salt to the end, so I think adding more to the marinade would be good for next time. Thanks for the recipe!

Candy Cane Fudge

Wow, this was awesome! I made it per the recipe, and wouldn't change a thing next time. I, too, lined the pan with Press'n Seal, then refrigerated. Easy removal! I didn't add the food coloring until it was all in the pan, and I added a drop here and there, and swirled it. Was beautiful! Thanks for the recipe!

Easy OREO Truffles

Amazing! My daughter called these "dirt balls" before we dipped them - funny. I, too, used the food processor to mix in the cream cheese (having the cream cheese at room temperature was key!). Easy! I refrigerated the balls overnight, and boy, were they easy to work with! The amount of chocolate to melt seemed like a lot, but you will need it, so don't skimp. I used red and green sprinkles and crushed candy canes for Christmas - festive! Thanks for the recipe!

White Chocolate Snack Mix

Patti's Mussels a la Mariniere

These were wonderful! It was my first time to make mussels, and I will definitely be making them again! Adding the green onions and tomatoes at the end was key, as others suggested. If I hadn't done that, they would have been mushy. I served these with "Insalata Caprese II" (on this site), plus some crusty bread. Thanks for the recipe!

Zippy Summer Shrimp

This was wonderful, and so fast! Two tsp. paprika sounds like a lot, but it wasn't - gave it a nice 'smoky' flavor. I used only 2 Tbl. olive oil to reduce the fat, and left off the red pepper flakes (just a personal preference). This went nicely with cole slaw and jasmine rice. Thanks for the recipe!

Spinach and Potato Frittata

This was fabulous! I used only 3 potatoes (instead of 6), and an entire bag of spinach (instead of 1 cup). As someone suggested, I added chopped tomatoes (3/4 cup) and chopped fresh basil (2 Tbl.). Delicious! Thanks for the recipe!

Spinach and Feta Turkey Burgers

These could have been a bit more flavorful - I found a similar recipe that is to die for: use only 1 1/3 lbs meat, add 1 tsp. dried oregano and 1 Tbl. grill seasoning to the meat mixture. Note that you don't have to use eggs (I didn't, to cut down on the fat & cholesterol), and they still bind well. I also use a topping made of 2 roasted red bell peppers, 1/4 cup fresh parsley, and 1/4 cup pitted kalamata olives (process all in a food processor, then add salt & pepper to taste). Easy Morning Glory Muffins

These were wonderful!! I used 1/2 cup oil + 1/2 cup applesauce to cut down on the fat - they were still super moist! I didn't peel the apple (lots of vitamins & fiber in the peel!), and I used a food processor to shred it. Big time saver! I think next time I'll use 1 cup wheat flour + 1 cup white flour to make them even more healthy. Note that my mixture made 24 muffins. Thanks for the recipe!

Raspberry Lemon Muffins

Asian Orange Chicken

Sorry, I didn't much care for this recipe. The breading was just too much (and too gooey). I followed the directions closely, too. I did, however, LOVE the sauce. I will make it next time I make dumplings.

Vietnamese Fresh Spring Rolls

Spring rolls just like in the restaurants! I use a different peanut sauce recipe though - it calls for peanut butter, hoisin sauce, lemon juice, and sugar (hoisin sauce is much too strong on its own). Thanks for the recipe!

Lemon Chicken Piccata

This was awesome! I forgot to cut my chicken breasts into medallions, so I just put a lid on them and cooked longer - still turned out great! I used 1/4 tsp. salt & 1/4 tsp. pepper with the flour. I used regular chicken broth instead of low sodium, as that was all I had on hand, and it turned out a little salty (capers are salty). Next time, I'll make sure I buy low sodium broth, just for this dish. I used only 1 Tbl. butter to reduce the fat (didn't need more than that!). Next time, I will use only 1 Tbl. parsley - 2 was too much 'greenery' on the chicken. I served with "Nutty Brown Rice" on this site. Thanks for the recipe!

Spinach and Sun-Dried Tomato Pasta

This was wonderful, and so easy! I used regular whole sun-dried tomatoes, so hydrating them wasn't necessary. I used an entire bag of baby spinach (no need to rinse & chop - time saver!). I added pre-cooked, seasoned chicken breasts, cut up to make it more of a meal. Thanks for the recipe!

Blueberry Sauce

Wow, was this good! I used only 1/2 cup sugar (3/4 cup sounded like a lot!), and would make that same change again - it was plenty sweet. Everything else was perfect as written! Thanks for the recipe!

Nutty Brown Rice Salad

This was awesome! I used more rice (made it in my rice cooker, and added salt, which this dish needed!), and a LOT more veggies: a whole crown of broccoli (cooked in the microwave for 3 minutes with 2 Tbl. water), 1/2 cup green bell pepper, 1/2 cup red bell pepper, 1/2 cup yellow bell pepper, and 1/2 pkg fresh mushrooms. Also, I toasted the almonds to bring out the flavor. Since I added more ingredients, I needed to double the dressing & olive oil, and add a bit more pepper. Thanks for the recipe!

Balsamic Roasted Pork Loin

Sorry, I didn't much care for the flavor of this recipe. I have a ton of pork loin / pork tenderloin recipes that call for baking in the oven, and after seeing the 354+ reviews for this one, I figured I needed to try it out. I was disappointed with the flavor - just seemed kind of funky...

Oven Barbecued Beef Brisket II

So easy, and such wonderful flavor! I served it with corn on the cob, baked beans, a salad, and French bread. My roaster was large, and I didn't get a good seal on the aluminum foil that I used to cover it. Sadly, the meat dried out. Not the recipe's fault! I think next time I'll try it with a slow cooker. Thanks for the recipe!
