Pork Tenderloin with Pineapple Salsa

This was wonderful! I love fresh ginger, so I used more than was called for. I did think it needed a sauce of some sort, especially since I served it with rice - that's probably easy to find though. Thanks for the recipe!

Caramel-Apple Crisp

This was great! I cut the brown sugar down to 1/3 cup, and it was plenty sweet. Serving with vanilla ice cream is a must! :) Thanks for the recipe!

BLT Salad

This was great! I used lowfat mayonnaise, skim milk, and turkey bacon - still tasted great! I used 1/8 tsp. salt, and thought it was the perfect amount. I think the garlic powder was a bit overpowering, so I will try just 3/4 tsp. next time. Thanks for the recipe!

Grilled Fish Tacos with Chipotle-Lime Dressing

I have been looking for a good fish taco recipe, one like the restaurants serve, and this was pretty close! The marinade was wonderful! I used white wine vinegar instead of regular, just to give it a little more flavor. I must admit, the dressing sounded extremely spicy, so I used Thousand Island dressing instead (believe it or not, a lot of the restaurants use it!). I used *red* cabbage instead of green and left off the tomatoes (again, both of those changes per the way the restaurants serve them). Thanks for the recipe!

Black Bean and Couscous Salad

This was fabulous!! I used fewer green onions (as in 2 Tbl.) - just a personal preference, 1/8 tsp. salt + 1/8 tsp. pepper. To save time, I used a can of corn (drained). The dressing measurements were perfect! Thanks for the recipe!

Crustless Mushroom-Spinach Quiche

This was great! I was in a hurry at the store & didn't find ricotta cheese right away, so I used cottage cheese (lower in fat - bonus!). Because cottage cheese contains so much water, I should have baked it longer, but the quiche still turned out great! Thanks for the recipe!

Garlic Kale

This was great, and so easy! I don't mind eating the stems (the part of the stem that contains the leaves, not the bare stalk part), so I just chop the leaves and stem without removing the leaves. Thanks for the recipe!

Crustless Spinach Quiche

Wow, this was awesome! I sauteed the onions in 1 Tbl. butter instead of oil to give it better flavor. I used only 1 cup of cheese to cut down on the fat. I thought a whole chopped onion would be overkill for such a small quiche, but it wasn't at all! Thanks for the recipe!

Chicken Scarpariello

This was wonderful! I used only 1 Tbl. oil and 1 tsp. butter to cut down on the fat - would do that again. I got distracted and didn't read the directions about cutting the chicken in strips, so I left them as whole breasts - still turned out fine, just took longer to cook. I added 1 Tbl. cornstarch to the sauce and it thickened it nicely. I served this with "Orzo with Parmesan and Basil" from this site (be sure and double that recipe), and it was a great complement. Thanks for the recipe!

Chicken Alfredo Pizza

This was fantastic! I left off the garlic butter (just a personal preference - didn't want to add more fat & I didn't think it would add all that much flavor). I cheated and used a pre-cooked/pre-seasoned chicken breast (just 1 was plenty because of all the vegetables I added). I added 1 sliced red bell pepper, 1 can artichokes (roughly chopped), and 1 pkg sliced fresh mushrooms. I made the mistake of putting the sauce on and letting it sit for 45 minutes or so (I got distracted), and it made the crusty a bit doughy in the middle. Will definitely make this again though. Orzo with Parmesan and Basil

Awesome! I omitted the butter (just wasn't needed), and didn't add salt (chicken broth and parmesan have it already). Added 1/4 tsp. pepper. Perfect! Next time I will double this - just didn't make enough to go with an entree (plus, you need more for seconds!). Thanks for the recipe!

Becky's Easy Cilantro Lime Rice

This was awesome! Just like the kind you get at Mexican restaurants!! I agree with some others that you need to *pulse* the cilantro in the food processor (added last) or it chops too fine. I also left off the 1 Tbl. butter to keep it healthy. Thanks for the recipe!

Pizza Dough I

This was wonderful! I read other reviews about it needing some seasonings, so I added 1 tsp. Italian seasoning + 1/8 tsp. garlic powder to mine. I also used olive oil instead of vegetable oil, to give it more flavor. Be sure and grease your pizza pan to avoid sticking. Thanks for the recipe!

Slow Cooker Teriyaki Pork Tenderloin

This was unbeliveable! I was lazy and didn't brown the meat in oil first - didn't miss a thing! I left off the chile peppers (just a personal preference). I cooked it on Low for 4 hours - perfect! After it finished cooking, I drained the juice into a saucepan, and added some cornstarch to it to thicken it. Wonderful sauce! Thanks so much for the recipe!

Gourmet Mushroom Risotto

This was amazing! I, too, cut the mushroom amounts in half. I added 1/2 tsp. salt & 1/4 tsp. pepper to mine. I left off the chives (just a personal preference). I think chopped fresh parsley would have been better. Thanks so much for the recipe!

Chocolate Eclair Cake

This was perfect for our beach vacation - quick, easy, and kid friendly. I halved it and put it in a 9x9 pan. The second time I made this, I used Nature Valley chocolate-covered granola thins & omitted the frosting. It was great, but the granola thins didn't get soft as graham crackers do. I think I'll stick to the original ingredients. Thanks for the recipe!!

I wish I had taken the time to read the reviews first. The feedback I had was the same as many others: not that flavorful, too much egg & breadcrumbs left over, and you need to reduce the baking time. Sorry.
