Hawaiian Pizza

This was fantastic! I used 1 Tbl. honey in the dough instead of sugar, and used Canadia bacon instead of ham (as restaurants do). I used fresh pineapple instead of canned - made such a difference! Thanks for the recipe!

Hummus Pizza

Thai Chicken with Basil Stir Fry

This was awesome!! I used vegetable oil instead of olive oil and cremini mushrooms instead of shiitake mushrooms (my store didn't have shiitake), but left everything else the same. I think next time I'll add 1/2 tsp. sugar (just needed a tiny bit of sweetener). I added 1 tsp. cornstarch to thicken the sauce. Thanks for the recipe!

Golden Sweet Cornbread

This was wonderful, and so easy! I love sweet cornbread, but this was just a tad too sweet, even for me. I think next time I'll reduce the sugar by 2 Tbl. It was super moist, and held up very nicely. Thanks for the recipe!

Watermelon Fire and Ice Salsa

I thought this was okay, but just didn't taste right with salt in it. I have never been a fan of salt on watermelon, so maybe that's what the problem was. I think I'll try it one more time, without the salt. Thanks for the recipe.

Almond Chocolate Coconut Cookies II

These were great! I couldn't taste the almonds, so I think next time I will add 1 tsp. almond extract, and then it will be just like an Almond Joy candy bar. I did cut down on the chocolate chips as others suggested (3 cups instead of 5) - perfect adjustment! Thanks for the recipe!

Mama's Blackberry Cobbler

Sorry, but this didn't work for me. I increased the milk to 1 cup (as others suggested), but the crust was kind of gelatinous for some reason. I decreased the sugar to 3/4 cup, and it was plenty sweet. The blackberries rose to the top as someone else mentioned happening.

Muesli-Applesauce Muffins

Awesome! I did make some changes though: I substituted applesauce for half of the oil, used only 1/3 cup (brown) sugar (2/3 sounded like it would be too sweet), and all whole wheat flour. I added only 1/2 cup raisins because my muesli had some. I did use all the 1/2 cup water, and it was just fine. Thanks for the recipe!

Grilled Portobello with Basil Mayonnaise Sandwich

This was amazing! I have made marinated portobellos before, and the vinegar was overwhelming - this was just right! I marinated the portobellos for an hour, then pan-fried them with 1 Tbl. olive oil (covered) for about 6 minutes on each side, then sprinkled with a little bit of salt. I left off the butter on the rolls because I didn't think it was necessary (and is just added fat). The basil-mayonnaise was the perfect touch. Thanks for the recipe!

French Market Sandwiches

This was awesome, and had wonderful flavor! I thought this was way too much butter for my taste (and hips), so I reduced it to 1/4 cup and reduced the mustard to 1/4 cup as well. The rest I left the same. Thanks for the recipe!

Cheesy Ranch Potato Bake

This was awesome! I lowered the fat -- I completely left off the butter, and was so glad I did. I used 4 cubed russet potatoes, spritzed with olive oil, sprinkled with chili powder, salt & pepper (I didn't measure), and baked only 35 minutes. I then stirred in 3/4 cup light Ranch, and 1 cup reduced fat cheese. Loved it! Thanks for the recipe!

Mediterranean Puff Pastry Chicken

Loved this, and it was so elegant! I thought the egg-garlic marinade was a big strange, so I didn't do that part. I used only 1 chicken breast (not sure how two would've fit with only 1 puff pastry sheet cut in half?). I cut the chicken breast in half and pounded it a little thinner (or the puff pastry would have burned by the time the chicken was done). I thought the recipe lacked the basic salt & pepper, so I sprinkled the breasts on both sides (was so glad I did!). I put 1/2 tsp. crushed garlic on each breast before topping with the other ingredients. Note that reduced fat pesto and feta cheese work fine in this recipe! I brushed my puff pastry with a beaten egg to make it glossy, and baked it for 35 minutes. Fantastic! Thanks for the recipe!

Roasted Yam and Kale Salad

I liked the combination of yams and kale, but didn't like onion in it, nor did I like the red wine vinegar and fresh thyme - it just didn't seem to go well. I used only 1 Tbl. vinegar, and it was still slightly overwhelming. Next time I'll just stick to the basic ingredients, omitting the onion, vinegar, and thyme.

Unbelievable Chicken

This was awesome! I cut the brown sugar in half (just a personal preference - I don't like really sweet meat), and was so glad I did! I marinated mine overnight, then baked (uncovered) at 350 for 40 minutes. Thanks for the recipe!

Tiramisu Layer Cake

This cake was amazing!! So beautiful! I added 3 tsp. coffee powder to the cake mixture. For the coffee mixture, I used 1/2 cup espresso + 1 Tbl. Kahlua. I made the filling as written, then for the frosting, I used 2 pkgs. Dream Whip whipped cream + 1/2 cup milk (and removed 2 Tbl. milk) + 2 Tbl. Kahlua (and no vanilla, as called for in Dream Whip). My coffee layer of cake was much taller than the other 2 non-coffee layers, but it turned out to be beautiful presentation! I shaved white and dark chocolate on top of sprinkled cocoa. This is definitely an adult cake, so make sure you serve a separate dessert for the kids. Thanks so much for the recipe!

Easy Lemon Cookies

These were awesome, and so easy to make! I added 1 tsp. lemon zest in addition to the lemon extract, and made a powdered sugar frosting (1 cup powdered sugar + 1 Tbl. fresh lemon juice + 2 tsp. milk), and that added a LOT of lemon zing! Without the frosting, I think the recipe needed 2 tsp. lemon zest. Thanks for the recipe!

Home On The Range Tuna Salad

This was wonderful! Cottage cheese is a great way to stretch a can of tuna, and I don't even care for cottage cheese (you can't taste it!). I doubled the tuna and celery, used 1/2 tsp. dried dill instead of lemon pepper and celery salt. I also added 1 Tbl. pickle relish and 1/4 tsp. pepper. Awesome on rye bread. Thanks for the recipe!

Rhubarb Bread I

I wasn't all that fond of this bread, although I love rhubarb. The bread didn't hold together well for some reason, and wasn't as flavorful as I was expecting. I baked it as one large loaf, as I didn't have smaller loaf pans, so maybe that was why.

Kentucky Biscuits

The flavor of these was wonderful, but mine didn't stay together very well for some reason. I incorporated the butter with a pastry blender, and it worked beautifully. I also added 1/8 tsp. salt. It seemed like they needed more buttermilk, so I think next time, I'll increase it to 1 cup. Thanks for the recipe!
