About this Cook
New mom all about trying to cook my daughter's first meals. Love using crock pot and having friends over for dinner. I work full time so easy and interesting dinners keep me motivated to cook for others.
My favorite things to cook
All kinds of chicken dishes. LOVE baking cookies and cakes. Kept my husband's whole med school class going on cookies. Honestly, I just want the dough, by the time the cookies are actually baked, I have eaten way too much!
My favorite family cooking traditions
Growing up, my homemade dinners included inst mash potatoes and canned corn, so I still have a lot to learn.
My cooking triumphs
Cookies! And my Margarita Chicken recipe, which I will be posting on here soon.
My cooking tragedies
Using cooking wine for risotto. HORRIBLE, way too much salt. Should have been a clue when the cashier didn't card me for it.

Orzo with Parmesan and Basil
I made this tonight on a whim, and it was sooo good! I topped with chicken breast that I cooked in a separate pan with garlic, salt and pepper. Great meal. I also doubled the parmesan, got a little carried away while grating it, but I thought it still tasted great! Nice simple recipe that my family loved.

Pineapple Salsa
This was fantastic! I found this recipe on my allrecipes app on my phone and had to login to review it! I did add some fresh lime juice, but kept everything else the same. I could eat this by itself, and did while my chicken was cooking. It is so light and fresh and crisp and tart and sweet! My husband tasted it and immediately scooped some in a bowl to eat with chips as an appetizer. This is definitely something to serve for Cinco de Mayo, for guests, or just as a light and satisfying complement to a meal. Honestly, if I was a vegetarian, I would probably eat this by the bowlful! But I do have to say, the lime juice is what made it perfect to me. I read the recipe four times because I thought for sure there should be lime juice.

Balsamic Chicken and Pasta
This was great. I was bored and searched recipes that had Balsamic since we had some on hand. This is definitely my new favorite. Not too many ingredients, and tasted so good. I know this is a bit silly to say, but it even looked great. There are several recipes that I make that taste wonderful, but aren't impressive to look at. This will be something to serve for any night of the week or when we have friends over. I didn't change a thing either.
