Chile Relleno Casserole

I was a little disappointed with lack of flavor in this recipe. I guess I was expecting it to taste a lot like chile rellenos, but it came nowhere near it.

Zucchini Brownies

Wow! I'm so proud of myself. I'm a non baker and this tasted like it came from a baking pro. Pat on the back for me. I followed the recipe exactly, except I left out a little more than a 1/4 cup of sugar, just because I don't like things super sweet. I was really worried when I was mixing it all up because it wasn't really a batter like I thought it would be, I had to press it out with a spatula to get it even in the pan. It came out perfectly. You would never know that there's zucchini in there and no eggs. This one is a keeper for sure!

Awesome and Easy Creamy Corn Casserole

This was absolutely delicious. The best corn casserole ever! I added a tablespoon of sugar to the recipe, but other than that it was perfect. I loved the stiffer texture of this recipe.

Finally, a fried chicken recipe I would be proud to serve anyone. This was so tasty and delicious. I served it with corn casseole and new smashed potatoes and chicken gravy. Awesome dinner! I'm no longer fried chicken cooking impaired. Woo hoo!

Cream Cheese Squares

Wow! These were so amazing ...and easy. I made the recipe exactly as written and I wouldn't change a thing. The buttery, cinnamon sugar crust was probably the best thing I've ever tasted. I will be making these squares often.

Scalloped Tomatoes

This recipe really surprised me. First of all the texture was perfect. Not watery like I expected. I only used 3 cups of tomatoes and I thought it was the right amount in ratio with the rest of the ingredients. The honey gave it a nice sweetness and I liked the flavor the mustard gave this dish, but I didn't find that it had enough flavor. Next time I would like to add garlic, herbs and Parmesan cheese as other reviewers suggested. I will use this recipe as a base and really have fun with it.

Slow Cooker Chicken Taco Soup

We love, love, loved this recipe! It's the easiest recipe I ever made. I used jarred jalapenos and used only black beans. This is going to be a fall and winter staple at my house for sure. Thanks for sharing Patti!

Avocado Mango Salsa

We absolutely loved this salsa. I used it with the Shrimp Cakes from this site and it was heavenly. I used jalapenos because that's what I had on hand. Other than that, I made it as per the recipe. This one's a keeper!

We loved the delicate flavor of these. They were perfect on the Avocado Mango Salsa from this site. I will be making them again but maybe use panko and make them a tad drier, we found them a little on the mushy side.

I don't know why I procrastinated so much to make this recipe. I can't believe what I've been missing all this time. We absolutely loved it! At first I thought it called for too much butter, but we sopped up all that golden goodness with a crusty baguette until the plate was licked clean. Amber, you're a smart cookie. We are hooked!

Creamy Horseradish Garlic Spread

This is really, really yummy! The horseradish makes this spread extra special. It has a light and refreshing flavor. I've only tried it with veggies, but I think it would be good with grilled pork.

This recipe tastes very similar to one I've been making for years but this is the first time I used green pepper. My family thinks it tastes better with the pepper. I only used 1 teaspoon of sugar, and I thought that was adequate.

Coconut Ambrosia Salad

I've never had ambrosia salad before, but I love all the ingredients, so I thought I would give it a try. Wow, I'm glad I did! It is such a refreshing summer dessert. I will be making this often, minus the maraschino cherries. Just going to grab some now!

Romesco Sauce

Thanks all for trying out the Romesco Sauce. Just a note that I should have had in the recipe. The garlic can be peeled or unpeeled at roasting time. I peel mine. The biggest complaint from reviewers has been that it's too vinegary. Please use less vinegar to start with, since some vinegars are stronger than others, and then if you are a vinegar freak like me, add more :] Cheers!

No-Guilt Zesty Ranch Dip

I love this recipe for so many reasons! I'm not a fan of ranch dressing, but this is light and refreshing, and the fact that's it's basically guilt free, it just made it taste even better. This is a real winner, especially for those of you who don't like "diet" dips or dressings. By the way, please use as a salad dressing too. Yummy!

Refreshing Watermelon Salad

I made only one fourth of the recipe and poured the lime juice right at serving time. I really liked the sweet and salty taste of the salad but even though I like Cilantro, I did not think it went well in the salad. I only used it for a small portion of the salad for the sake of rating and for the photo, but then I used basil in the rest of the salad and we really liked it. It brought out the sweetness and freshness of the watermelon. I will make this again but with basil and will assemble the salad right before serving. With the changes, it's a 5 star salad.

This is my new favorite hot sandwich! I used balsamic glaze because I like the concentrated sweetness and tang but otherwise, I made the sandwich as per the recipe and it was fantastic. It was simple and quick. The flavors go so well together. Next time I will use onions as Mrs. Williams suggested, but for now my tummy is happy.
