Peanut Butter Hummus from JIF®

Reviewed: Jan. 3, 2012
I didn't feel like buying tahini so thought I'd try this. It's pretty good! I made it with hot chili oil (sesame oil base) and drizzled in about 1/8 cup of reserved garbanzo liquid to thin it out. Told my son it's PB dip and he ate it on banana chips.

Creamy Chicken and Rice

Reviewed: Feb. 9, 2009
The high cal/fat of the original was a downer for me, but I thought it was a good jumping-off point for my own version. I used 2 cups of cooked rice, 2 cups of leftover rotisserie chicken, covered with a basic bechamel to which I added thyme, salt, pepper, garlic powder, 1/4 c shredded 4-cheese blend and maybe 1 T cream cheese. I put some mozz on top and yum, yum! This is a good idea that you can make your own.

Campbell's Kitchen Creamy Chicken Enchiladas

Reviewed: Feb. 9, 2009
I've been making this for years, and it is one that my husband requests over and over. Very creamy for when you want that. I use larger tortillas, because I usually have burrito size on hand, and you can be liberal with varying ingredients and the amounts used.

Watermelon and Strawberry Lemonade

Reviewed: Jun. 2, 2008
Wow! Really good. I used 1/4 c lemon juice and 1/4 c lime juice, and only 1/2 c of sugar. My 3-year old (who won't eat fruit) loves it, and for the grownups it's pretty darn good with a shot of vodka!

Baked Fresh Cherry Pie

My first berry pie ever, and it came out so amazing. I followed the recipe as-is. My husband went nuts over it.
