Creme Anglaise I

So good and so easy to make. However, cut down on the sugar unless you have a real sweet tooth. I think next time I'm only going to add 1/4 c. of sugar. But good all the same! I had mine with a baked apple...delicious!

Cajun Style Baked Sweet Potato

Delicious! I omitted the cornstarch and brown sugar (to make it less starchy and more healthy) and then put it with my oatmeal, drizzling maple syrup over top.

Tuna Noodle Casserole from Scratch

Great foundation recipie. Also super easy to adapt to a gluten free diet: do about 2 tbsp of sweet rice flour instead of the regular flour (sweet rice flour is sticker and more "glutenous").

Megan's Granola

Wow! Good recipie! I love it! I am a celiac member & have bought my granolas for a very expensive cost but no longer! I revised the recipie to suit my dietary needs: instread of oats, replace with brown rice flakes (found at most health food stores); I omited the wheat germ replacing it with crushed flax seeds; I halved the oat bran but could replace with rice bran if needed; instead of sunflower seeds I did millet meal (a nutty crunchy flavor--yummy!); and because I found it too sweet with the brown sugar and the syrup (plus, I need to restrict sugar intake) I did all honey; for the vegtable oil I did the heart friendly olive oil; and instead of all cinnamon, I love the spiciness of nutmeg and did half and half.

Flourless Chocolate Cake II

I eat gluten free and my friend introduced me to this cake when she had me over for lunch. I made it the following week because it is a chocolate lovers dream come true! True, it is a very dense cake, does not rise much, but it is so rich and when eaten straight from the fridge, tastes and has the texture of slightly softned fudge :). So good.

Carrot Cake III

Great recipe! I followed the recipe ingredient for ingredient except when it came to the carrots. I added 1 c. of pineapple with juice and 2 cups of carrot (instead of 3 c. carrot) which my mom always did in her carrot cake. Delicious!
