Broiled Chicken with Roasted Garlic Sauce

This was absolutely wonderful. My husband said it tasted like something gourmet!! First time he's ever said that! Anyway I had fresh garlic on hand so I used that and while washing off the dirt I slipped it out of the skin. I didn't know if that was going to ruin it or not but it didn't. I then rubbed in oil, wrapped in foil and put it in the oven for 20 minutes and it came out perfect! I ended up just slicing it into little chunks. I didn't use parsley and just put the cheese in it until I thought it looked like enough. I also used heavy cream instead of milk because I had it on hand and wanted to use it. Probably why it tasted so good. A lot of people said that this was too bland and so I decided to cook it in butter, season all, and pepper right on the stove. And let me tell you... it turned out awesome! Served it with broccoli and bow tie pasta. This is going to be used a lot.

Cottage Cheese Chicken Enchiladas

These were really really good. I made it with 12" flour tortillas. I dipped the tortillas in red enchilada sauce. Used cheddar, that's what I always use, because I always have it. I think that's about all the changes I made, it was excellent!

Herb Rubbed Sirloin Tip Roast

My husband said this was the best dinner I have ever made... the only thing I did different was not putting in any dried thyme, and that's only because I didn't have any on hand. Oh yeah and I used 1/2 of the amount of salt called for and used table salt. Anyway this rocked!! It was really spicy, just to let you know. But great!

Kelsey's Favorite Stuffed Green Peppers

This was really really good. I put the onions in first then added the hamburger. I added lots of spices mentioned in other reviewers. I blanched the peppers, they came out perfectly. In case you don't know how... boil water, add peppers, let sit for 3 minutes in a strong boil, then put them in cold water right away. I used spaghetti sauce and cheddar, just cause that's what I had on hand oh and I did add a can of diced tomatoes and when I make them again, I will do it the same way!!

This dish is awesome! If you add diced tomatoes with chillies and then some Ranchero cheese on top it is without a doubt five stars! And so easy!
