Amish White Bread

Fantastic! I did tweak it a bit. I used half super fine whole wheat flour and half white. Toned the sugar to 1/4 cup per reviews b/c I wanted more of a sandwich bread and it was great. It rose beautifully. I'm new to baking and I've been trying to find a good keeper recipe and I think that I found it.

Health Nut Blueberry Muffins

Great muffin! I too tweaked it to make it more healthy for my family. I used all whole wheat (ground super fine), used right at 2/3 cup brown sugar instead of white, 1 cup ground oats (no oat bran or wheat germ) and used applesauce instead of oil (which is a bit trivial, but oh well). Oh, and I added a pinch more baking powder and soda for the denser ingredients. They rose beautifully and tasted fantastic. I will definitely make these again!

Trinidad Stewed Chicken

This was not a big hit. I gave it 3 stars instead of two b/c I did add more coconut milk than called for, so maybe that was a big part of the problem. It definitely tasted better than it smelled, but it was just ok. Oh, and when I added the chicken to the brown sugar syrup the syrup crystallized instantly. It did liquify once the everything got hot again. This was my first try at Caribbean food and maybe it's not for everyone. So for anyone who has never had this type of food, you should really try a very small batch before you make a whole chicken that may not be to your liking. Just a thought.

Breakfast Sausage

So good. I subbed the pork for turkey but it was made perfect when I doubled the sage and bumped up the marjoram to a rounded tsp. That makes it 5 stars. I am glad to finally not have to buy sausage anymore.

Three-Step Salad

We weren't too impressed. It needed something else. The dressing was a little bland, but we're new to making non creamy dressings. However, we LOVED the candied almonds...I think that they made the salad, plus it's something that I've never even thought of doing but will do more often.

Baked Beef and Brown Rice

We loved the flavor and the ease, but not the grease. I used 85/15 beef and it was not lean enough. So definitely use the leanest possible. I will make again but will probably try it with chicken.

Chicken Pot Pie IX

My family really like this recipe. I added some chopped potatoes with the veggies and used the oil pie crust recipe from this site. Will definitely make this again. ***Made several more times and used smoked chicken and experimented with the seasonings...Love it...Thanks!

I was a little disappointed in this recipe as I found it tasted way too much like chili. This meal wasn't all lost in that I froze the lentils and now have a chili base ready to go when needed.

Spiced Sweet Roasted Red Pepper Hummus

I loved it! I didn't have a jar of red peppers so I used the dried ones that I had from the produce section. I used a frozen ice cube of lime juice b/c no lemon and used tahini, garlic and salt. It was great. My 18motnh old couldn't get enough of it. I will definitely make this again. Thanks!

Salsafied Chicken and Rice

Good recipe! I used instant brown rice and added an extra can of stewed tomatoes to add more "umph". I served it over a bed of greens and with tortilla chips and EVERYONE loved it. It's versatile enough that you could add a few more veggies too. Definitely will make again. Thanks!

Santa Fe Chicken

It was pretty good. The kids loved it. My only problem was that the chicken was pretty bland. I think that next time, I'll cut the chicken into bite sized pieces and bake then so the chicken can absorb more flavor. Marinating the chicken ahead of time might help, but then that would ruin the speediness of the recipe. All in all, I really enjoyed it..everything but the chicken had a great flavor that was perfect for my two small kids. Thanks for a quick meal idea!

Texas Ranch Chicken

It was ok. I thought it a little odd not to have any seasonings on the meat, so I added some, but not too much b/c I didn't know if it would be overpowering. The first batch was a little bland, but the second batch was really good when I spiced it up more, added a little tabasco to the ranch and topped with panko bread crumgs that I seasoned. I will definately make again...just with a little extra. Thanks for a quick and easy change to chicken.
