Campbell's® Cheesy Chicken and Rice Casserole

I've done this several times in several ways. Doing it the way the recipe describes makes undercooked, incredibly bland, chewy, depressing food. However, if you cook the rice in advance, and cook the chicken in advance (preferably cubed small and mixed in with the rice and vegetables) it turns out much more flavorful. Sure it adds a few extra steps so it no longer is a quick after-work meal, but if you have the time to pack that extra TLC and flavor in, DO IT. I also cook the rice with some chicken stock and I use broccoli cheddar soup cans instead of the suggestion.

Turkey Enchiladas

I used some of the suggestions on the reviews (such as putting some of the sauce on the bottom of the baking pan instead of dredging the tortillas) and it turned out great. I did modify it to the point that it may as well be a different recipe, though... I sauteed my veggies first and added one roma tomato, one jalapeno, and half a 6 oz can of olives, chopped - a healthy pinch of paprika, cumin, and chili powder - a smidge of salsa, and sauteed all that with the turkey and mixed in the cheese once off the heat (All 2 cups worth). I also topped the enchiladas with a little extra cheddar and the last half of the can of olives. For anyone complaining about the blandness of this recipe, try it this way and your taste buds will be dancing in delight!

Toasted Pumpkin Seeds

OM NOM NOM! I am eating these as we speak. I had a little over two cups so I increased the amounts just a tish and added a sprinkle of garlic powder, inspired by a previous reviewer below. DELICIOUS! They are a teeny bit too salty, but it's not so bad with something to drink to take the tang off. The crunch is phenomenal; it reminds me of popcorn, only way, way better for you.

Slow Cooker Beef Stew I

Absolutely delicious! This was my first attempt at any kind of stew, or any kind of crock pot recipe, but I followed the recipe as close as I could (I had to trim the ingredients down a bit as I have a small crock pot). I let it stew for a little more than 12 hours and as soon as I came home the most delicious aroma greeted my senses. When I removed the lid it smelled faintly of beef teriyaki but man oh man, this is seriously a delicious stew! Very nice and hearty, everything nice and tender. My boyfriend loves it and I think even our cat wants some. Will definitely be making it again!

Fabulous Homemade Bread

I've been trying in vain to make bread that is fluffy and does not taste like saltines for a while now, and I finally succeeded in graduating past that with this recipe. I did not have bread flour and only had one pack of dry yeast so I thirded the recipe. I added some vital wheat gluten to normal white flour as a previous reviewer recommended, and I added a squeeze of honey into the flour as well. I guess where I went wrong in the past is that I didn't let the bread rise in the bread pan. I did that this time and now I have DELICIOUS, fluffy, thick, slightly chewy, filling bread. I plan to use this recipe for bread for now on... eating fresh homemade bread with butter and honey is more of a delight to me than homemade cookies with milk.

Jay's Signature Pizza Crust

Made this about a year ago with half whole wheat flour, half all-purpose. It turns out just as delicious that way, too. Chewy, warm, mmm! Going to make it again today, can't wait!

Spinach Quiche

This was good! I took a lot of people's suggestions - Used only a tablespoon or two of olive oil, I used fresh spinach, prepared a second pie crust just in case (I didn't need it), etc. I had plain feta so I added thyme, rosemary, basil and a tiny dash of cayenne. I topped it with sliced Roma tomatoes like I saw in the photos. It's very tasty; my husband is helping himself to his third slice!

Real Hummus

I just made this. I used the OP's revised recipe (more tahini, more garlic, less salt) and it is divine. Next time I'll probably just amp up the garlic and keep the tahini the original measurement. I added the recommended dash of cumin, and a little cayenne for myself. I blended the olive oil right in to the hummus since I'm making a batch to keep handy in the fridge. This is PERFECT, and so deliciously creamy and wholesome. I can eat it by the spoonful! It's so much tastier than any store bought hummus, and so much cheaper in the long run, too. :)

Mediterranean Lemon Chicken

I don't have a baster, so I was worried about this recipe turning out dry. However, that was FAR from the result. During the first half of cooking I covered the chicken with tin foil. Throughout the entire recipe I turned the chicken drumsticks over every 10 minutes or so. These turned out absolutely wonderful, moist, and flavorful, and went great with the white potatoes I chopped in there. I'm definitely going to put this in my recipe box and make this in the future!
