Sheryl's Baked Potatoes

I was just looking for a faster way to bake a potato, and this worked great! I had no problems cutting the potatoes or fanning them out, though I had rather large potatoes. I used olive oil instead of butter, which worked fine though it did smoke up a bit at first, only used salt, and skipped the cheese step entirely.

Danish Peppernut Christmas Cookies (Pebernodder)

Man, are these yummy! I made them the size of a teaspoon, and baked them for only 7 minutes. I was able to fit 40 on a baking sheet, since they really don't spread much. They're the consistency of a sugar cookie (not gravel, haha!) I didn't have the ground cloves, and didn't miss it, but I think I'll add more cardamom next time.

Eggnog Fruit Bread

Delicious! I baked it for only 60 minutes, and should have taken it out earlier still. I used full fat, full flavor egg nog, and switched out chunks of a dried fruit bar for the candied fruit, which I did not have on hand. The dough is springy and moist, and I thought it was very flavorful. My hubby and I ate half the loaf for breakfast, it was so good!

Kalamata Olive and Garlic Bread

Very easy, and very good. I just mixed it with a spoon and then my hands, and kneaded it a bit in the bowl. I made it with whole wheat flour, and it still came out very moist. I got half way through the recipe before I realized I was out of Kalamata olives. Oops! I used green olives instead, and it was tasty! It did end up a little too salty with the green olives though, so if I do that again I'll cut some of the salt in the bread. Great recipe, and I'll be using it again!

Strawberry Bread III

Pretty good, very moist, could probably get away with less oil. I think I'll use butter next time for a better flavor. I used frozen raspberries instead of strawberries, which worked well and gave the loaf a neat, blueish color. I don't own a bread machine, so I baked it in a normal loaf pan at 350F for 45 minutes.

Holiday Cranberry Chutney

I only had 7oz of cranberries, so I used two (small-med) granny smith apples to make up the missing volume. Also cut the sugar in half to reflect the lower amount of cranberries. Delicious and a big hit!

Tomato Basil Salmon

Delicious! I used fresh basil on top of the tomato, which made it crispy and yummy. I had to skip the cheese, and it still turned out great!

Lemon Cupcake with Blackberry Buttercream

I made these into rainbow cupcakes, and it worked really well! I found the 20-25 min cooking time to be a bit long. I took them out at 20 minutes and those in normal paper-lined pans were a little more burned on the bottom than I would have liked, though the silicon cup ones came out perfectly. As others mentioned, the frosting recipe is huge compared to the cupcake recipe. I doubled the cupcake recipe, which made 24 normal sized cupcakes for me (six of them in silicon cups), and still had a little bowl of frosting left. I'm sure we'll find a use for it, though!

Pecan Pie IV

So good! Made this for Thanksgiving and it was gobbled up in no time. I got many compliments on this pie. I used a normal pie pan (just one of those cheap metal types) and the full recipe fit perfectly. It was also very simple to make. Will be making again and again!

Best Big, Fat, Chewy Chocolate Chip Cookie

Raspberry Lemon Muffins

Wonderful and so easy! I've made these exactly as the recipe is written, and I've left things out or changed everything from the type of flour used, to the yogurt flavor, to the fruit, with no problems. I usually make six very large muffins, and just add a few minutes to the baking time.
