Spicy Refrigerator Dill Pickles

Reviewed: Jun. 29, 2011
Wow, I had everything on hand to make these, including freshly picked pickling cucumbers! After reading the other reviews, the only change I made was cutting the sugar in half. It's only been 5 days, and like the other reviewers, I just couldn't wait to taste them. Incredibly awesome! Absolutely love them, but even with the sugar cut in half, I can still taste a slight sweetness. Next time, ( this weekend, bumper crop!) I will use slightly less than half of the sugar, seeking perfection! It's all just a matter of taste, but I really don't like any kind of sweet pickles, I love garlicky, vinegar pickles. Thank you so much for sharing the recipe!

Spicy Roasted Red Pepper and Feta Hummus

Reviewed: Apr. 30, 2011
I've never found a hummus recipe that I liked, so mine is always store bought. Not any more! Based on other reviews, I added fresh chopped garlic, black olives, a touch of olive oil, and just because it was on hand, fat free feta with tomato and basil. Put it all in the food processor and voila! Very tasty! Will be saving a ton of $ by making my own from now on! Thanks, Valerie!

Absolute Mexican Cornbread

Reviewed: Jan. 11, 2011
After reading the other reviews, I also made some changes to this recipe. I cut the butter to 1/2 cup, the sugar was decreased to 1/2 cup, I used about 3/4 cup of jarred jalapenos, and a dash ( or 2) of cayenne pepper. I also cooked it in a 10 inch iron skillet ( hey, I'm from the South, ya'll!) for about 35 minutes at 350 degrees. Turned out great, awesome, excellent! I would have given it 5 stars, but the original recipe had too much butter and sugar for my taste. Will definitely add this to my recipe box with my changes, and I will surely make this one again!

Spicy Slow Cooker Black Bean Soup

Reviewed: Feb. 11, 2009
This is a delicious soup! I almost overcooked it in the crockpot, leaving me with a very thick soup, but it was still very good. I used leftovers for lunch the next day by putting the beans in a whole wheat quesadilla with chopped red onions, fat free mozzarella cheese (grated) , chopped cilantro and a bit of sour cream, I rolled it up and made the best black bean burrito I've ever tasted! Thanks for the recipe!

Awesome Egg Salad with a Kick

Reviewed: Feb. 9, 2009
I don't like egg salad, but was making it for my husband...needless to say, I found I do like egg salad. We prefer food on the spicy side, so I added a pinch of cayenne pepper. Really tasty! Will definitely make this again! ( I left off the bacon because I'm vegetarian, but next time will have bacon handy for my hubby.)

Cocktail Meatballs

Reviewed: Dec. 20, 2008
I'm vegetarian, so I didn't eat these, but my party guests raved over them. They liked the kick from the chili sauce. Next time, I will add the soy sauce as someone had earlier suggested.

Artichoke Spinach Lasagna

Reviewed: Sep. 22, 2008
I really wanted to make this more of a vegetable lasagna, so I added baby bellas, squash, zucchinni, fresh basil, fresh baby spinach, and a pinch of fresh rosemary. To make it healthier, I used Pam Olive Oil Spray coating, whole wheat uncooked lasagna, and lowfat cottage cheese for the first two layers, part-skim mozzarella for the top two layers.I used canned artichokes in water, finely chopped and a Vidalia onion.I also added thyme and oregano, and used a packet of Bertolli's Summer Crushed Tomato and Basil Pasta Sauce 13.5 oz.. Adding freshed cracked black pepper and kosher salt....mama mia. I've never made a veggie lasagna before, but this will be a staple in my house from now on. Thanks for the base recipe!

Grilled Beef Tenderloin with Herb-Garlic-Pepper Coating

Reviewed: Sep. 2, 2008
This is an absolute keeper. I made this for a cookout on Labor Day. It got rave reviews from everybody. I will definitely make this again, probably as an alternative to turkey for the holidays.
