Pollo Fajitas
Excellent recipe. My whole family enjoyed it and we printed it out for future use. I made two changes: 1) Instead of cooking the chicken for 5 minutes then adding the veggies, I cooked the veggies for 10 minutes first then added the chicken and cooked for an additional 7 minutes. We prefer the veggies less crispy and it came out delicious. 2) Instead of chili powder, I used chipotle chili powder which added a smoky note to the dish. Highly recommend doing this if you like the chipotle flavor. The overall flavor of the chicken was great - it's a good marinade. Would definitely make this again, and would add more peppers and onions next time.

Ground Beef Enchiladas
This recipe was great! Very easy to make, and was ready to go in the oven in about 15 minutes. The only change I made, like many others have said, was using sour cream instead of plain yogurt (mostly because plain yogurt tends only to come in large containers, whereas you can buy a small container of sour cream). I was a little dubious about using condensed cream of chicken soup, and mozzarella cheese in this recipe, but I used them as mentioned in the recipe, and it was truly delicious. I'm keeping this recipe to use in the future!

Spicy Orange Beef
This was a delicious meal! I didn't think it was too spicy but I really like spicy food so others may have found it spicy. I took the tip to marinate it with the juice from 1 orange and some soy sauce before cooking. I also did not include the orange peels, but i did put in about a tablespoon of orange zest to the sauce. It was excellent, i plan on making it again!
