Ricotta Cake

Try Lemon cake mix, also chocolate! It's DELICIOUS and EASY...and always gets loads of compliments. I've been making this cake for years and years....love it so much I wanted it as our wedding cake but was too moist to hold up in tall layers. Does not need icing, powered sugar over a doily makes it very pretty. Keeps well in the refrigerator and is always yummy to the last bite.

Holiday Chicken Salad

This is the BEST chicken salad we have EVER tasted anyplace. I followed the lead of several reviewers and added only 1/2 cup dried cranberries. I added 1 cup of white grapes, cup in half and 1 tablespoon of drained chopped pimento (for more color). I made it the day before serving and it was perfect! I did add garlic and poultry seasoning, bay leaf, etc. to the water when cooking the chicken plus one pkg. of Goya chicken bouillion. I saved the broth for soup and it too is delicious. Excellent!! Highly recommend and will definitely make again and again. (Be sure to toast the pecans! Makes all the difference in the world.)

Baked Pineapple II

Delicious! I used brown sugar and pineapple tibits instead of crushed pineapple, otherwise no changes! PERFECT! Will definitely make many more times. Thanks for a wonderful recipe! EASY ALSO...I can see making this the day before and leaving in the refrig. to bake just before dinner.

Delicious Ham and Potato Soup

BEST soup! Fresh corn added, garlic, carrots chopped and some grated cheese on top...made it perfect. Important to get the flour and butter mixture nice and thick, I almost browned it, wonderful flavor from that. Making it AGAIN this week!

Key Lime Pie VII

I would give this 10 stars if the rating allowed! This is the BEST Key Lime Pie I have ever tasted and it's EASY. I used Nellie & Joe's Key Lime Juice, I just think it's the best....and you can use the rest of it in anything that calls for lemon or lime juice.

Green Grape Salad

I have made this grape salad about 20 times now....and I use 4 cups....not 4 lbs. of grapes. I also use an electric mixer to fluff the cream cheese and the sour cream. Make sure you DRY the grapes...I wonder if that's what the one person did wrong that said hers didn't come out well. That's the only way to mess this up! Toasted pecans and brown sugar on top makes it really special...everyone I've served it to loves it....it's really a light dessert...not a salad! Enjoy! Makes a great pot luck dish. AND...it will keep overnight in the refrig. perfectly.

Deviled Eggs

Delicious and EASY. I only added a tablespoon of sweet relish, otherwise exactly as the recipe...EXCEPT for the salt...ADDED NO SALT, thanks to other reviewers. THANKS to Busymomntx for how to cook the eggs! Perfect! First time I've ever got them just right. Will definitely make again.

Blueberry Sauce

Delicious and EASY. I made changes...had tons of fresh blueberries so used about 6 cups, no orange juice but did have 1 orange so used the zest from the entire orange in a cup and a half of water, only used 1/2 sugar...which was plenty...and added vanilla instead of almond, as I didn't have it. Cooked all together about 30 minutes, just let it simmer for awhile. DELICIOUS!!!!! PERFECT!!! Served it over pancakes and so glad I have more left for ice cream tonight. EASY!!! YUMMY!!!

Streusel Topped Blueberry Muffins

These are the BEST muffins I've ever made! I followed the recipe exactly EXCEPT added almost a TABLESPOON of ORANGE ZEST and used half brown, half white sugar as another person had suggested. Also added 2 cups of blueberries. I thought I was doing the streusel part wrong, it wasn't very crumbly, but it tastes wonderful. The prep is a bit much, but really worth it. Will definitely make again and again. My husband is on his 3rd one already. This may not be good! :-)

Coconut Poke Cake

10 STARS! My husband wanted a moist delicious coconut cake for his birthday....well, this is it! I used a butter cake mix and instead of the cup of water added coconut cream and rum flavoring. I like so many others was worried about the sweetened condensed milk and the cream of coconut....(the bottle I got was with the wines and had 21 ounces. so I used the 7 extra ounces instead of the water in the mix.) I poked the holes and poured all of the mixture over the cake...let it sit on the counter for a couple of hours and it soaked up every bit of it. I used a can of "whipped cream" icing and lots of fresh coconut which I sort of pressed into the icing. DELICIOUS!!! My husband just said I could stop making all other cakes and just make this one for every occasion. It is moist and just right....hard to believe but it's NOT too sweet! Perfect!!! Will be making this cake for the rest of my life.

Classic Goulash

Our children ask for this when they are heading "home" and will be arriving late! To the reviewer saying something is missing, it's BASIL, add LOTS of basil and garlic! AND PEPPER to taste! This is also even better the next day if there's any left.
