Fish in Foil

My own stupidity, I should have realized the amount of salt in it. I scaled it for 6 servings and WOW it was nasty salty. I added the dill weed suggested by some and used a poblano instead of jalapeno. Very good recipe and a keeper with 1/4 the amount of salt.

Don't feel bad if you can't get fresh seafood. Not everyone lives on the coast. Substituted EV olive oil for butter, why butter for a Mediterranean dish? The only thing missing in this recipe is salt salt salt. Add 2 teaspoons of salt. It was bland until I added that. I cooked the broth for about 1 hour 15 minutes before adding the seafood.

Corn Yeast Rolls

If you're looking for a recipe similar to Pillsbury corn bread twists look no further. I have been searching for something like this for years. I did have to add 2 tablespoons melted margarine and 3 tablespoons milk. If you want a similar taste to the Pillsbury twists I'd recommend using melted butter instead of the oil and margarine. That'll be my next try!

Italian Chicken Marinade

I've been using this recipe for years. Any salad dressing you like works as a marinade. My family especially likes it with creamy caesar dressing. You probably don't really need salt if you use a commercial dressing.

World's Best Lasagna

Awesome lasagna recipe. I'm not a lasagna fan so that's saying a lot. I'm not sure about the proper measurements or just the pan size? There's enough meat in the recipe for 3 layers of noodles. I used 15 noodles (5 per layer) and double the ricotta mixture and it comes out better. 4/8/2012: I made this again last week and it's still a family favorite. I had some baby spinach leaves that were getting old in the refrigerator so I added a layer of spinach leaves on each layer of ricotta. It was a huge hit, said to be the best yet.

Roast Sticky Chicken-Rotisserie Style

If you don't have white pepper don't use it but for those who have never used it it's completely different than your usual black pepper. If you do any cajun cooking you'll want to keep white pepper in your cabinet. It adds a depth to your spicy dishes that surprises. Anyway, LOVE this recipe, the whole family does. I haven't had a chance to refrigerate the bird for 24 hours but it still comes out amazing. I have a compact rotisserie so 2 hour cook time.

Marinated Grilled Shrimp

Without a doubt the best shrimp marinade. I forgot the garlic and it was still outstanding. I marinated for 2 hours. If you want the full flavor of any marinated shrimp recipe DO NOT use pre-cooked shrimp, it won't soak up the flavor nearly as well as uncooked.

Almond Paste

I haven't actually made this particular recipe. Honey has always been used in my family. It makes a thick paste that is easier to handle and tastes better. Try Almond Paste II.
