Barbecue Chicken Casserole
Seemed like dinner seperates put together for a casserole recipe. It was good but didn't hit me as a hearty casserole that could handle being the main dish.

Mexican Blackened Corn
nice side dish -- great flavor -- group dove in when I brought it to a potluck because it was something different!

California Grilled Veggie Sandwich
followed suggestions and added sundried tomatoes to mayo mixture, then included eggplant with the other veggies. AMAZING and so much flavor.
