Oatmeal Pudding Cookies

Reviewed: Jan. 5, 2014
These were fantastic! Changes I made were using 1 c butter in place of shortening, only used 2 1/2c oats based on other reviews, and added 1 tsp cinnamon and 1/4 tsp allspice. Also used dried cranberries in place of raisins. So delicious, will definitely make again!

Fluffy Pancakes

Reviewed: Apr. 4, 2013
Made these just as recipe directed and they were good, although not my favorite pancakes. I gave them 4 stars though because I think it was a personal preference thing, I just prefer my pancakes moister and a little sweeter. Also be aware there were only 2 of us eating and there was only one pancake left..if you are making these for more than 2-3 people may want to double recipe.

Ham, Potato, and Cheese Soup

Reviewed: Mar. 27, 2013
This soup was scrumptious! The only thing I changed was using 2 cups chicken broth in place of some of the water. Tasted like cheesy au gratin potatoes with ham in soup form. Super duper delicious, will definitely be making again!

Baked French Fries I

Reviewed: Mar. 20, 2013
Loved these fries! I only used 1 tbsp oil for 3 potatoes but tripled the spices, so fries ended up being lower in fat and delicious. I do agree with other reviewers - 450 is too hot, baked at 400 for 30-35 mins. instead. The thinner you cut the fries the crunchier they turn out - yum!

Ultimate Green Beans

Reviewed: Feb. 9, 2013
This recipe was good for a change but not sure I would make it all the time. Followed the recipe to the letter except did not have crushed red pepper so used a mix of cayenne pepper and black pepper. The spiciness with green beans was a nice change though, will make from time to time.

Dee's Roast Pork for Tacos

Reviewed: Jan. 16, 2013
Love this recipe! I cook my meat in the crockpot on low for several hours until done and falls apart, the spices in this recipe are so amazing! Tastes like what you pay several bucks for at chipotle or qdoba.

Miss Betty's Super Quick Dinner Rolls

Reviewed: Jan. 1, 2013
These little rolls were awesome! Very moist and tasty. I listened to other reviewers when they said they were a bit bland tasting (I could see that if I didn't add anything extra) so added 1/4 tsp. rosemary. Delicious!

Ham and Bean Soup II

Reviewed: Dec. 30, 2012
This recipe was not good. Made it exactly as directed except decreased water to 2 1/2 qts since read in many other reviews 4 qts was too much. Even with just that much water soup was very bland, and I used a large meaty ham bone from a spiral sliced ham so it should have been very flavorful. Tried doubling the seasonings as others suggested but it was still bland. Definitely won't be making again.

Best Beef Dip Ever

Reviewed: Nov. 20, 2012
Absolutely delicious! I listened to other reviewers' suggestions and decreased the rosemary to 2 tsp instead of 1 tbsp and substituted 2 cups beef broth for 2 cups of the water, and added 1/2 cup finely chopped onion. I actually put my roast completely frozen in the crockpot on low and 7 hours later it was done..the meat is so tender it just falls apart, it is super easy to shred. I served the meat on sub buns toasted in the oven with provolone cheese on top and au jus on the side. The au jus is delicious! All in all will definitely make again..adding it into my monthly rotation.

Butternut and Acorn Squash Soup

Reviewed: Nov. 19, 2012
Delicious recipe! I halved the cream cheese and brown sugar as others suggested (I definitely would not have wanted it sweeter, and it was creamy enough in my opinion) and cut the butter used to saute the onions to 1tbsp. Using these changes it was only 2.5 Weight watchers points plus per serving! Would definitely make again.

Gobble Up Granola Snacks

Reviewed: Jun. 7, 2012
I have made these twice now and they are a really quick and yummy snack. The taste reminds me of a chewy granola bar but a little more sweet. I am planning on varying this recipe some next time I make it, perhaps some mini chocolate chips or craisins instead of raisins?

Cottage Cheese Chicken Enchiladas

Reviewed: May 8, 2012
Like many others was sooo skeptical about trying this recipe but so glad I did! The seasoned chicken and cottage cheese combo made a delicious filling for enchiladas. I made this with flour tortillas, making sure to put a thin layer of enchilada sauce on the bottom of the 9x13 pan and dipped the tortillas in enchilada sauce before filling and rolling them up. Would definitely make again!

Oven Scrambled Eggs

Reviewed: Apr. 26, 2012
These oven-baked eggs turned out perfect! I made two pans for an Easter brunch, one 9x13 as directed and the second was a half recipe baked in an 8x8 pan with shredded cheese on top. I was a little worried because they had to sit about 15 mins before serving while the biscuits baked (the recipe says serve immediately), I just covered the pans with foil and they tasted great and the consistency was perfect. Will definitely make again!

Butternut Squash Soup

Reviewed: Nov. 17, 2011
This soup tasted great but was way too creamy and I only used half of the cream cheese called for! When I make this again I will omit the cream cheese and maybe just add a little half and half for creaminess.

Raspberry Streusel Muffins

Reviewed: Nov. 17, 2011
These are delicious but I wish I would have added a bit of sugar to the fresh raspberries I added, they were tart and so the muffins didn't taste as sweet as I would like.

Applesauce

Reviewed: Oct. 7, 2011
This is an great tasting easy applesauce recipe! I used fresh golden delicious apples from the orchard, halved the amount of sugar and used a little less water than what was called for and it turned out perfect. Cooked it for 3-4 hours in the crockpot on high heat and mashed most of it with a potato masher which left some chunks in it. Delicious!
