Coffee Date Bread

This is the dark date bread that I remember from my childhood. It is also very similar to a bread that my neice used to make. (but she guarded that recipe from everyone!) So glad I tried it. The coffee gives it that extra something and makes it the dark color I remember. Going to make this for our cookie/candy/bake sale at church next month!

Apple Cranberry Bread

I just had my first slice of this tasty bread. The only changes that I made were that I used dried cranberries as that is all I had on hand. Also subbed one cup of diced fresh pear, and the other one cup of apple. As to it being so dry, I find that if I mix in the fruit with the creamed egg,sugar, oil mixture, the sugar juices the fruit and gives enough moisture. Nice that it only ueses the 2 T. of oil. I will definately make again, and use all apple and fresh cranberries. I did put a little crumb topping on to dress it up a bit.

Blackened Tilapia with Secret Hobo Spices

I'd been searching for an easy recipe for pan grilled tilapia. Have never made tilapia before, and this sounded so easy. And it was! We loved it! Just the right amount of spices for me, tho hubby would enjoy a tad bit spicier. I did not use the bread under it as there was hardly any pan juices to speak of. Forgot the lemon, but it was still very good. We will definately be making this again!

Heather's Cilantro, Black Bean, and Corn Salsa

Tried this a couple weeks ago to take to a cook out. Everyone seemed to like it. It seemed to be missing something for me. Perhaps the cilantro as I didn't have any and used parsley flakes instead. Will make again!

Swedish Apple Pie

a good friend gave me the recipe years ago and I never got around to making it. It's a winner! Wanted something easy and this sure is. As several other cooks advised, I only softened(not melted)the margarine. Left out the nuts as hubby can't eat. Will sure be making this again! Oh, the addition of part brown sugar made the crust nice and brown and cruncy! Yum!

Dee's Date and Nut Bread

Just what I was looking for. So much like the date/nut bread my mother used to make. Also much like a brown bread baked in cans that my niece used to make(and would not share the recipe!) Think I will try it again using part dates and part raisins and bake in the cans. As suggested by another review, I used hot coffee in place of the water and think that was what made this recipe perfect in my book!
