Big Al's K.C. Bar-B-Q Sauce

Great base BBQ sauce. I recommend making a large amount and freezing it. Note: It doesn't freeze solid, but bags worked in the freezer for me. This is the second time I have made this recipe and it is definitely a keeper. I made the following adjustments: no butter, 1/4 tsp celery seed, 1 tsp cayenne, and 1-2 chipotle peppers. I left the butter out and had no problems.

World's Best Lasagna

I used an italian seasoning with fresh herbs and didn't put any fennel since I don't like it. This is the best lasagne I've ever had. I've used this recipes close to 10 times now and it never fails to deliver!

Molasses Cookies

When I was a kid I used to have molasses cookies that were a very dark brown. These were not it. I used brown sugar instead of white, but it still didnt do the trick. I thought these would make a wonderful gingersnap, but not a molasses cookie. 4 stars on taste, 2 for being molasses. Don't be deterred though, this is a very nice cookie.

Fluffy Biscuits

Added some garlic and cheddar cause I love both of em. Biscuits fluffy, but not really flaky. Fluffy but the texture wasnt firm enough for me. Will do again if I cant find a better recipe.

Taqueria Style Tacos - Carne Asada

Taste is wonderful. I left out the onions because I dont like them. I added a 1 pasilla and 2 ancho chiles to the roasted blended salsa. Really wonderful, added some spice and smokiness. Made a simple tomato, garlic and lime seasoning and threw it all together. Really just great. I found one batch feeds a lot. I saved half and am using it tomorrow. The carne asada seasoning is so good, I think I will make a big batch of the seasoning blend so I can throw this all together quickly later. Yum.

Smooth Sweet Tea

Pretty good. I only used 1/2 cup of sugar as the others suggested and thought it was great. No bitterness at all from the tea. I like mine a little stronger, I add about 2 cups of water less.

Cheesy Zucchini Casserole

Pretty good at getting rid of the overflow of zucchini from our garden. You could even throw meat into this or more veggies. I added garlic to make it taste better cause it can be a little bland without the peppers.

Florentine Artichoke Dip

Yummy bubbly dip. Spread on some good french bread. I added more garlic cause that's what I love. Add some jalapenos or red chili pepper flakes if you like it to have a great kick!

Tequila Shrimp

Boyfriend was super enthusiastic about this recipe. Told me to definitely keep it. I added some red pepper flakes and did half beer half tequila on the chicken. I marinaded for 20 minutes and then cooked it all for about 10-15 minutes in the skillet. That way the alcohol burns off. Threw it over some coconut rice and yum!

Spinach Stuffed Chicken Breast

Its true these are a little bland. I added a little cayenne (it wasn't enough) and made a cream spinach sauce over pasta. Good, but not great. I made this 4 stars, because I think its a great recipes, but needs to have someone to tweak with it. I will definitely make again, adding fresh herbs, more garlic and some hot stuff.

Slow-Cooker Chicken Tortilla Soup

Pretty good, if not very authentic. I used hominy instead of corn. Needed more heat to it. Our cheap way was to add hot sauce after the fact, but next time I will use some real chilies and blend them into a sauce. Boyfriend said it was good. He told me we have to keep this recipe.

Kung Pao Chicken

I added some bamboo shoots cause I like them, but I wish I had more veggies, like broccoli and/or snow peas. It needed something green. Sauce was a little gooey, but I did double it, so it might have been that I messed something up.The fresh chopped peanuts are essential.

Italian Sausage Soup with Tortellini

Great basic recipe and then season to taste. I followed the recipe exactly, except doubled the garlic (I love garlic). I tried to buy low sodium everything because canned broths are always high in sodium. I doubled the veggies, since I am trying to cut down on meat. I recommend doubling the oregano and adding more fresh herbs.
