Veracruz-Style Red Snapper

I forgot the cayenne, but will put it in next time. I also only added 1 lime because I added a few extra tomatoes. I used 1/2tbs caper juice & 1/2 tbs green olive juice. Fabulous!

German Lentil Soup

I couldn't get my lentils soft in a slow cooker. I've had problems with beans too, so I don't think this is the recipes fault and I didn't deduct stars. I don't like caraway, so I didn't use it. I doubled the carrots cause that's my favorite part. I didn't have a ham hock or cubed ham, but I did have a 1.3lb smoked turkey leg. Amazing. I have turkey thighs smoked locally at Willie birds, so I am lucky to try that next time. Oh, I added 6 cups broth based on other reviewers. I like a thick lentil soup, and this was a little too loose for me. Next time I'll use 5 cups.

Cranberry Pistachio Biscotti

I followed the recipe exactly. The pistachio is a little much, I'll cut down by 1/2 c next time. Up the cranberries just slightly cause I love them. When the biscotti came out of the oven the first time, I covered them with a cloth to cool them slower. Also, the dough it really sticky, so I used a bowl of water to periodically wet my fingers. The dough didn't rise or move at all, so make it as wide or thick as you prefer. I did not get 36 servings, I got 23, but my biscotti were admittedly thick and tall. I dipped in melted chocolate chips and had with my coffee for breakfast.

Halloumi Cheese Fingers

This is really great and the lemon adds a great acidic touch. Paired with a side salad with cucumbers and you have a healthy meal. You can also grill this cheese over indirect heat.

Sopapilla Cheesecake Pie

I used 1/3 c less sugar in the cheesecake and 1/4 c less on the butter mixture. I might halve the butter next time because it seemed a little oily. Equally good hot or cold.

Turkey Burgers with Brie, Cranberries, and Fresh Rosemary

This was pretty tasty. I added garlic. I bought my turkey from the local shop and the grind was too fine, it made the burger too soft. I think I'll put some beef or pork in it next time. I'll also add more cranberries, because I love them and I added one sprig of rosemary and will add a touch more last time. I think this recipe is 3 stars cause o f my meat, but I gave 4 because it wasn't the recipes fault.

Chef John's Pumpkin Pancakes

I used 1/2 tsp less sugar added some allspice, 1/8 tsp clove and no oil. It was great. I added milk, but will try the recipe as is next time. They were pretty fluffy with 1/4 c more milk, but might be better without the added fluid. Oh, I made this recipe for 3 servings and used a whole egg.

Pumpkin Chocolate Chip Cookies III

If I hadn't known this was a cake like cookie, I might have rated this 4 stars. I used homemade pumpkin purée and I was out of nutmeg, but will add the nutmeg next time. The cookies stay the same size you bake them, so make very small ones. I cooked them at 375 for 14 minutes but made Huge cookies. I took other reviewers suggestions and used 1 cup of chocolate chips. Nuts would be great, sadly I am allergic.

Cajun Wild Rice

I guess I'm just not a fan of canned soups. I thought this recipe was great- without the soup. I added a jalapeño for heat and extra garlic. I would eat this without the soup again.

Cheesy Polenta

I used this with a hard goat cheese. I was going to skip the butter, but the flavor was harsh and it seemed really thick. I added 2 tbs of butter and that solved those problems. This is definitely a keeper. One thing is you have to constantly stir it. Mine cooked up in less than 10 minutes.

Chinese Chicken Salad III

I made this without the wontons to save on calories. I also used a healthy amount of chilie garlic paste and a touch of sriracha to add spice. It was thick and tasty. Might add a touch more cilantro next time.

Roasted Tomatillo and Garlic Salsa

I made this salsa and it's just ok. I didnt add any water since I like a very thick salsa. I really liked how the roasted garlic flavor came through. I did add some lemon/lime juice to try and brighten up the salsa and some cilantro, but this just didnt taste bright and vibrant which is what I was looking for. I will continue my search for the best tomatillo salsa.

Prune and Olive Chicken

I had this with brown rice. Next time I will not use any oil since the chicken exudes a lot of fat. My chicken didn't brown right, so I'll leave off the brown sugar too which made it too sweet.

Summer Squash and Sausage Stew

We left out the potatoes and parsley because we didn't have any. Also no cayenne because I used 3 Fresno chilies which are hotter than jalapeños. My fiancée forgot the cheese which I will definitely use next time. I used it with fresh sourdough rolls, but I think crusty day olds would be even better. Great summer leftovers soup. I bet this freezes well too.

I added 1 tsp cinnamon and 1/2 tsp nutmeg and 1/2 tsp vanilla extract. I might do heaping tsps next time. Tasty base recipe to use.

Vegan Pancakes

I had a vegan friend come to visit for breakfast. The batter for these are super thick! Don't thin it out. Once you get it on the griddle smoosh the batter a bit so that the pan. Three stars cause I had to add spices to make these taste good and cause they aren't like non vegan pancakes. If I were vegan, this might be a 4 star recipe.

Cauliflower with Dijon Sauce

I had some leftover dijonaise to use and though I'd give this recipe a shot. I added about 1/3 cup of bread crumbs, 3 cloves of garlic and some chili pepper flakes. This was pretty good, but not fabulous. I think I prefer roasted cauliflower with just garlic and salt and pepper to this recipe.

Banana Pancakes I

I made a few additions so instead of 5 starts it gets four. I added 1/2 tsp allspice and 1 tsp cinnamon. If I have buttermilk on hand I sub it for the milk and add 1/2 tsp baking soda. This makes a thick batter and in the past, I have added more milk. Don't do it, they don't rise as much.

Rhubarb Strawberry Crunch

My fiancée who hates rhubarb looked like he was going to cry after I told him the next morning that I took the leftovers with me to work (so we didn't consume all the calories). I used less sugar than what was called for and rhubarb out of the garden. Wouldn't change a thing
