Mexican Rice II

A good start, but this needs more spices. Follow this recipe, but let your imagination go, garlic, more chili powder, cayenne, enchilada sauce etc.

Lime Chicken Soft Tacos

After reading most of the reviews, so many people said they thought oregano was a poor fit for this dish. The reason for that is that there are 2 types of oregano: Italian (regular) and Mexican. Generally, unless your oregano is labeled Mexican or you bought it at a Mexican store, it is not. The flavor is very different and would probably taste good here. That being said, cilantro and cumin would be equally good.

Creamy Lemon Dressing

I used plain yogurt and added either oregano or thyme. It goes without saying, I added extra garlic. Very tasty!

Sunday Morning Lemon Poppy Seed Pancakes

Very tasty. I might use all lemon juice instead of vinegar. Maybe 3tbs lemon juice. I used more zest, and next time 1 full tsp vanilla extract. Also, since I love poppy, I think you could do 4 tsp poppy seeds. Otherwise very good and fluffy.

Lemon Chicken II

Used just the sauce recipe and halved it. Followed it except I added the lemon juice at the end per another reviewer. I added about 1 lemons worth on a half recipe. Needed just a touch more, or maybe some lemon zest next time.

Perfect Lemon Curd

I was trying to conserve on the amount of eggs I was using, so I tried this recipe. I had the pot on super low, but I still got 3 spots of scrambled egg whites, so strain it. I'm a pretty good chef, so I think the scrambling has to do with the temp control for beginners, but also with how many egg yolks vs egg whites the recipe uses. I used another recipe before and didnt have any scrambled. I like my lemon curd tart, so I added more lemon juice and a 1/4 cup of lemon zest. Kept the sugar the same. Will make again.

Down-Home Black-Eyed Peas

The water at the beginning for the peas I lightly salted. Used one large smoked turkey drumstick cut the meat off and added it and the bones to the stew (fished the bones out later). Couldnt find the okra. Used 1 carrot, 3 celery stalked plus 2 cups of veggies I cooked with a turkey for thanksgiving. Followed cooking instructions. Turned out great :) Makes a lot of soup, I may halve it next time.

The Best Lemon Bars

I add 2/3 cup lemon juice and up the flour to 1/3cp. Used the full amount of sugar since I increased the lemon juice. I also added he zest from the lemons I used (1/4-1/3cup). Increased the bake time to 25-30 minutes. Perfectly tart.

Turkey Pot Pie I

My new favorite pot pie recipe. I pre baked my crust and added the filling. I made a roux first, then added the broth. Turkey was cooked with the veggies. I added some sage cause I like that herb. Super tasty.

Fish Tacos

On the sauce, I followed the recipe except for the dill. I hate dill. Well, I did add 1/8 tsp of ancho chile powder. I so wanted to fry the fish, but my new diet and inner voice said no.... This time I listened. I pan sautéed and seasoned the fish with salt and pepper and chili powder. I free styled a cabbage slaw. I finely shredded some cabbage and a carrot. I made a slaw sauce with some honey, lime juice, oregano, and cumin. It was amazing. This Recipe is great because the sauce and slaw can be made ahead of time and can be doubled or tripled for multiple meals during the work week. If you pan cook the fish or even bake it, dinner can be done in 15 or 20 minutes if the sauces are pre made. I made a guacamole and added it to the tacos. A squeeze of lime makes these perfect. I made these with California rock cod. This fish didn't cook well in the pan, it is a soft flake that kind of fell apart. This could also be user error (points to self). Plus side, the fish was incredibly moist and fresh tasting.

Veracruz-Style Red Snapper

I forgot the cayenne, but will put it in next time. I also only added 1 lime because I added a few extra tomatoes. I used 1/2tbs caper juice & 1/2 tbs green olive juice. Fabulous!

German Lentil Soup

I couldn't get my lentils soft in a slow cooker. I've had problems with beans too, so I don't think this is the recipes fault and I didn't deduct stars. I don't like caraway, so I didn't use it. I doubled the carrots cause that's my favorite part. I didn't have a ham hock or cubed ham, but I did have a 1.3lb smoked turkey leg. Amazing. I have turkey thighs smoked locally at Willie birds, so I am lucky to try that next time. Oh, I added 6 cups broth based on other reviewers. I like a thick lentil soup, and this was a little too loose for me. Next time I'll use 5 cups.

Cranberry Pistachio Biscotti

I followed the recipe exactly. The pistachio is a little much, I'll cut down by 1/2 c next time. Up the cranberries just slightly cause I love them. When the biscotti came out of the oven the first time, I covered them with a cloth to cool them slower. Also, the dough it really sticky, so I used a bowl of water to periodically wet my fingers. The dough didn't rise or move at all, so make it as wide or thick as you prefer. I did not get 36 servings, I got 23, but my biscotti were admittedly thick and tall. I dipped in melted chocolate chips and had with my coffee for breakfast.

Halloumi Cheese Fingers

This is really great and the lemon adds a great acidic touch. Paired with a side salad with cucumbers and you have a healthy meal. You can also grill this cheese over indirect heat.

Sopapilla Cheesecake Pie

I used 1/3 c less sugar in the cheesecake and 1/4 c less on the butter mixture. I might halve the butter next time because it seemed a little oily. Equally good hot or cold.

Turkey Burgers with Brie, Cranberries, and Fresh Rosemary

This was pretty tasty. I added garlic. I bought my turkey from the local shop and the grind was too fine, it made the burger too soft. I think I'll put some beef or pork in it next time. I'll also add more cranberries, because I love them and I added one sprig of rosemary and will add a touch more last time. I think this recipe is 3 stars cause o f my meat, but I gave 4 because it wasn't the recipes fault.

Chef John's Pumpkin Pancakes

I used 1/2 tsp less sugar added some allspice, 1/8 tsp clove and no oil. It was great. I added milk, but will try the recipe as is next time. They were pretty fluffy with 1/4 c more milk, but might be better without the added fluid. Oh, I made this recipe for 3 servings and used a whole egg.

Pumpkin Chocolate Chip Cookies III

If I hadn't known this was a cake like cookie, I might have rated this 4 stars. I used homemade pumpkin purée and I was out of nutmeg, but will add the nutmeg next time. The cookies stay the same size you bake them, so make very small ones. I cooked them at 375 for 14 minutes but made Huge cookies. I took other reviewers suggestions and used 1 cup of chocolate chips. Nuts would be great, sadly I am allergic.

I guess I'm just not a fan of canned soups. I thought this recipe was great- without the soup. I added a jalapeño for heat and extra garlic. I would eat this without the soup again.
