All-Day Meatballs

Reviewed: Jan. 19, 2009
I've made this recipe before and the sauce is ok. I prefer to instead add one bottle each of bbq and chili sauce. I also prefer to bake the meatballs so I can drain the fat. What DO I like then? I love the fact that it has a whole cup of oats. It is a really economical way to stretch the meat and oats are so good for you too! I had no problems with the amount of milk, as some did.

Mashed Potato Soup

Reviewed: Sep. 19, 2008
Very good base to work with!! Of course I made some changes, like everyone on this site. I used chicken stock instead of plain water, upped the mashed potatoes{instant worked great}, and subbed thin sliced cabbage for the celery for a colcannon effect. It turned out wonderful and I will make this again. Top with shredded cheese and crumbled bacon for the ultimate comfort food. My 2 year old loved it[well everyone actually}. It is rather bla as written so play with it, it can be a 5 star recipe with a few special touches!!! Thanks for sharing!!

Low Fat Buttermilk Ranch Dressing

Reviewed: Sep. 9, 2009
This is amazing!!! It sure doesn't taste low fat!! I make this all the time now, we rarely buy dressing anymore. I use dried herbs and hellmans olive oil mayo. Tried it once with fresh herbs and I like it much better with dried. I also use dried minced onion as well. Thank you for sharing this wonderful recipe!!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 9, 2009
I don't know what happened, I followed the recipe, but it just wasn't good to me. I love tortilla soup, but not this one. Just blah, not the great flavor I expected. I added black beans and it still was not very hardy. Maybe because it is a slow cooker recipe, I've found stovetop recipes usually turn out better.

Best Ever Jalapeno Poppers

Reviewed: Jul. 10, 2009
I've never made poppers before this, and I probably never will again as I found it to be a lot of work!! They were very tasty but my kitchen was overwhelmed with spiciness that had us all coughing. I think blanching the peppers is a must or they may turn out a bit too crisp. Let them cool for the flavors to fully develop. The triple dip process made mine turn out huge[not a bad thing!]. Freezes well, pop them in the micro for a minute. Yummy!!!

Tater-Dipped Eggplant

Reviewed: Aug. 19, 2008
What a time saver! Frying in batches takes forever, I will probably always use this method now. I added some seasoning to the tatos, garlic and onion powder, pepper. I used olive oil instead and it worked great, maybe add a bit more when you flip them. thank you for the recipe, we will have eggplant more often now!

Banana Banana Bread

Reviewed: Jan. 19, 2009
Great! Gone in one day! 60 min. was a tad too long, 45 may have been perfect. For a tad bit healthier, try whole wheat pastry flour and coconut oil in place of butter. Good with cranberries or choc. chips.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Aug. 2, 2011
wow! great, super easy recipe! if there was a world record for pickiest eater, my dad would hold it. He LOVED this!!! It looked too simple to be good, but it is soo good! The frozen chicken worked great, subbed soy sauce for the worcestershire, which worked fine. Dump and go! thicken the sauce a bit with flour after shredding and adding back the chicken if u like. this is now a staple dish in my house!

Easy Mashed Potato and Roasted Vegetable Enchiladas

Reviewed: Jul. 10, 2009
These are really good!! What a great way to use up veggies in the fridge, you could use a great number of variations for what you have on hand. I used much less oil for roasting, but then the broccoli burned. Next time I will take them out before the others are done roasting. Really yummy comfort food, thanks for sharing!!

Grandma Sophie's Smashed Potato Salad

Reviewed: Jan. 19, 2009
So easy!!! This is about how my own always turns out. I love the smashed texture. I like to add additional spices like seasoned salt, celery seed, dried minced onion. Sweet relish works good in place of the pickle if you care to try, just drain off most of the liquid before adding it

Scalloped Potatoes and Onions

Reviewed: Jan. 9, 2009
I love that there is no milk and less butter than a traditional scalloped potato dish. This turned out very good. I sauted the onion with the butter, used 1 more potato than in recipe, increased the broth to 2 cups 'cause of the extra potato, and cooked it in a 4 qt. rectangular baking dish to cut down on cooking time{1 hr.} Cheese on top last 5 min. or so and it was excellent! Not the same as standard scalloped potatoes, but awesome as it is.

Peanut Butter Noodles

Reviewed: Dec. 16, 2008
I used sunflower butter as we have a nut free home, and it is excellent. I never have ginger on hand when I make this, so I guess I can do without it as it is 5 stars the way I make it. 3 cloves of garlic is a bit much for me, I do 1. Get low sodium soy sauce, once I used golden boy brand, and whoa!!! that was salty! Sriracha chili sauce is good in here if u like it pretty hot. For a tamer dish with a medium bite, I use hot chili oil. Delicious, cheap, fast, this dish has it all!!

Apple Dip

Reviewed: Jan. 19, 2009
This is really good. My toddler can't get enough. It was a tad too thick though, maybe I'll add a bit of milk next time. Great way to eat apples or pears
