About this Cook
I love to cook, but have little patience for complicated recipes. My son has a nut allergy so I must improve my skills so he can eat all the foods that may not be safe to eat from a bakery, restaurant, etc. It can be a challenge for folks with food allergies, and someday I would love to open a dedicated nut free cafe.
My favorite things to cook
I only use all natural ingredients, and I love the idea of taking comfort foods you already love and making them healthier. I only use whole wheat pastry flour in my baking, and try to add healthy ingredients like vegetable purees, flax, beans, etc. I enjoy "kid" foods just as much as any kid does. Mac n' cheese, chicken nuggets, all that stuff. I just use whole wheat noodles and reduced fat cheese, and bake the nuggets.
My favorite family cooking traditions
I don't think we have too many traditions just yet. But I am starting this holiday season. I'll make all the yummy treats my son can't have since we learned of his allergy. Halloween, thanksgiving, xmas, easter themed goodies. I hope this will become one of his favorite traditions as well.
My cooking triumphs
I have become more proficient at utilizing things I have on hand. I hate to waste food and will search for recipes that use what I need to before it goes bad. I will alter the recipe a bit if I think it will work. Sometimes it turns out great. I recently made an amazing apple breakfast cake that was so moist and delicious, I can't believe it was healthy.
My cooking tragedies
Don't try to make popcorn with olive oil!!! I had to take my son and leave the house with all the windows open for an hour just to air it out! Not a single kernel popped, but the pot was scorched!!

Zesty Slow Cooker Chicken Barbecue
wow! great, super easy recipe! if there was a world record for pickiest eater, my dad would hold it. He LOVED this!!! It looked too simple to be good, but it is soo good! The frozen chicken worked great, subbed soy sauce for the worcestershire, which worked fine. Dump and go! thicken the sauce a bit with flour after shredding and adding back the chicken if u like. this is now a staple dish in my house!

Low Fat Buttermilk Ranch Dressing
This is amazing!!! It sure doesn't taste low fat!! I make this all the time now, we rarely buy dressing anymore. I use dried herbs and hellmans olive oil mayo. Tried it once with fresh herbs and I like it much better with dried. I also use dried minced onion as well. Thank you for sharing this wonderful recipe!!

Best Ever Jalapeno Poppers
I've never made poppers before this, and I probably never will again as I found it to be a lot of work!! They were very tasty but my kitchen was overwhelmed with spiciness that had us all coughing. I think blanching the peppers is a must or they may turn out a bit too crisp. Let them cool for the flavors to fully develop. The triple dip process made mine turn out huge[not a bad thing!]. Freezes well, pop them in the micro for a minute. Yummy!!!
