Baja Stuffed Potatoes

This is my second time making these potatoes. As written, this recipe gets three stars from me, as it is a little bland. These are the changes I made. After baking my potatoes and scooping out the pulp, I mashed the pulp, then added 4 TB. butter and the amount of sour cream called for. I added salt and pepper to my taste which really helped the flavor. I then added two cans of the drained corn and one can of the chilies. I did divide the filling and used cheddar in half of the filling for my kids and pepper jack for my husband and me in the other half. Then, I baked as directed, pulled them out, topped with more cheese, baked 5 more minutes and served. YUM!! I will keep on making this recipe with the changes stated. Oh, I did have some filling leftover and may only use one can of the corn next time.

Smokey Chipotle Meatloaf

This is delicious! The only change I made was to bake on a cookie sheet lined with tinfoil. I just shaped it into a loaf and added a tad more BBQ sauce(used Sweet Baby Ray's Hickory & Brown Sugar) to the top because we like it saucey. This came together quickly and has the right amount of spice and heat. This is definitely a keeper for us.

Creamy Chipotle Chicken

This is a nice, flavorful, and easy crock pot recipe. I made this as is but put my chicken breast in frozen. It came out great :) I cooked this on low and it was done in my slow cooker after only 4 hours. The chicken was moist and the sauce is nice and creamy with a smoky kick. I served this over rice with a side of broccoli. I will be making this again.

Peach Beehives with Hard Sauce

These were pretty good. My husband loved them and the kiddies thought they were really cool. I used homemade pie crust. The peaches were a little hard to wrap but it does make it easier as stated if you hold the dough in place and twirl the peach around to wrap. I also found it easier to seal the pieces with a dab of water. Do not wrap them too tight or they will break open in the oven. I had two of them do this. The cooking time was right on for me, done to perfection after 40 minutes. I doubled the hard sauce because you need plenty to serve with these.

Grilled Yellow Squash

This recipe couldn't be more simple but produces a very tasty grilled squash. I did only use 1/4 cup of olive oil for four medium squash but kept the two cloves of garlic. This was plenty of oil and I will probably even use less next time.

Bada Bing Bada Banged Potatoes

These are definitely keepers. My family loves PW's Crash Hot Potatoes, so when I saw these I knew I had to make them. They are like PW's but with a kick. These have the perfect amount of seasoning and spice. I only made a half batch but should have made the whole recipe because the fam loved them.

Sweet Chipotle Grilling Sauce

WoW!! I made this exactly as written and it was perfect for my family. It makes approx. 3/4 cup of sauce. We grilled pork tenderloin today and basted it with this. Before basting, I had reserved some of the sauce for dipping. It is sweet, spicy and smoky. We will be using this again soon. My kids loved it too!

No Bake Chocolate Oat Bars

These bars were so easy and very good. They are wonderful on a hot summer day when you don't want to fire up the oven. My whole family loved them. I lined my pan with foil so they were easy to lift out and cut.

Rempel Family Meatloaf

My family enjoyed this. I made as is except I did add ketchup to the top before baking. It is very flavorful and simple to prepare. It is a tad salty adding the soup mix, ketchup, A-1, and butter crackers but no one complained. I would make this again. Oh, and next time, I will shape into a loaf and bake on a cookie sheet lined with tinfoil to cut down on the grease.

Grilled Italian Chicken

Peachy Bread Pudding with Caramel Sauce

My family devoured this quickly. I made as directed but will add a cup more of peaches next time. I used Penzey's Ceylon Cinnamon which works well with fruit. The caramel sauce is delicious!! I will be making this again.

Cucumbers in Sour Cream

I made these as written and didn't quite like the taste at first but after they set awhile, I loved them. I would definitely make these again and let them set before serving. They make a quick, easy side dish.

Taco-Topped Potato

I gave this 3 stars as written. The meat with only salsa and Worcestershire is pretty bland. I remade them this week using regular taco seasoned meat and perked them up with homemade cheese sauce. My family said this upped it to a 5-star weeknight meal. To serve, I split the potatoes by making an X in the top and squeezing the potato a little to break up the pulp. I then spooned the cheese sauce over, meat, salsa, lettuce, sour cream, tomatoes, black olives, and green onions. I will make these again with the stated changes.

Slow Cooker Sweet and Tangy Chicken

My family loved this. I used Sweet Baby Ray's Hickory BBQ sauce and followed the directions. My chicken was done after 6 hours of cooking on low. It was delicious served over rice. This will go in my crock-pot rotation. Thanks for sharing.

Passion Bars

All I can say about these bars is run to your kitchen and make them now, especially if you love PB & Chocolate together :o) I followed the directions to a "T" and these turned out awesome! Everyone who tried them loved them. I did line my pan with foil so the bars lifted out easier to cut. I stored mine in the fridge.

Tortellini Bacon Broccoli Salad

YUM!! This was the hit of my son's birthday party. I made as directed for the most part but used red onion and threw in a 1/2-3/4 cup of shelled sunflower seeds(I got the idea from another broccoli/tortellini salad on this site). I made this several hours ahead of time and it was perfect. I had several requests for the recipe. I will be making this again.

Lime-Pineapple Delight

I have made this a couple of times now and love the flavor. Lime and pineapple together are very refreshing. As written, I give this 4 stars because the sugar is way too much. This time I made a double batch and only used 3 cups total. This was perfect for us. So give this one a try but add your sugar to taste not as the recipe states. Also, when I made it this time I could not find any unsweetened drink mix that was just lime so I used lemon-lime and it was still great.
