Basic Corn Muffins

These were really good, I added 1 cup shredded zucchini and 1 cup shredded cheddar cheese. Will definitely make again.

Double Chocolate Cherry Muffins

So moist and delicious, definitely a 10 star muffin recipe. I used plain yogurt in stead of sour cream because that is what I had and I mixed the chocolate chips with the dry ingredients and the cherries with the wet ingredients before folding them together. Will definately make these again

Lemon Poppy Seed Muffins I

These were alright, I doubled the recipe but only used the original amount of poppy seeds. I had to add a couple splashes of milk in order to get enough liquid to mix with the dry ingredients. They have alright flavour, but not enough lemon for me (and I added lemon extract) they also came out pretty dry.

Gumbo Style Chicken Creole

Very good, I doubled the recipe, used butter instead of oil and added 3 cups of chicken broth, served over rice. Family loved it and so did my guests. There were 8 of us and there was only a little left over, so I don't see how the original recipe would feed five without the addition of the broth.

Easy Apple Danish

These were a lot easier to make than I thought they would be. I followed the recipe exactly, other than to add more apples and omit the walnuts in the filling. I made the dough last night and left in the fridge overnight, then made them for breakfast. They were a huge hit, the kids thought it was great to have dessert for breakfast :) The dough was a little sticky going into the fridge, but it was so easy to work with in the morning. Will definitely make these again, maybe with different fillings next time.

Pina Colada Ice Pops

These sounded so good that i doubled the recipe. I thought the mix tasted really good and so had very high hopes. Unfortunelty once they froze they seemed to lose some of their flavour. I think they are good, but are lacking something, just not sure what. They were definitely refreshing on a hot day, not sweet at all though. I would almost think it is the coconut that is lacking to make it a true pina colada flavor, perhaps switching coconut for the vanilla? Either way they were a little too bannany but the adults liked them and the kids didn't

Maraschino Cherry Almond Cookies

The kids loved these cookies. However, I wasn't as impressed with making them, and the flavour wasn't really worth all the effort. I didn't have almond extract so I used vanilla, which could be part of them not having a very bold flavour. The dough was so soft that I couldn't roll it into a log, so I stuck it in the fridge overnight (almost 24 hours) and tried to roll them into a log again, still too soft and sticky, resulting in losing a lot of the dough to my hands. But not one to waste ingredients I put some flour on some wax paper and rolled it that way and stuck it back in the fridge for a couple more hours. When I went to cut it the dough was too soft resulting in me having to roll each slice and press back into shape. The taste is good, just not a very strong cherry flavour, and that's okay the almond extract would've helped with that. But the difficulty in making them made them lose a star, perhaps using them as a drop cookie would be better.

Soft Giant Pretzels

I checked the dough during the cycle and it looked very sticky so I added a little bit more flour, probably should've added a lot more. When the dough was done it was a sticky mess but I wasn't going to waste it so I got as much out of the pan as I could and kneaded it a couple times on a floured surface. It was very easy to work with despite how sticky it was and the water bath did make them sticky but once they were drained they were easy to move to the cookie sheet. I will make them again but I will add a little salt to the dough.

Zucchini Soup III

This was absolutely delicious. The blend of flavours was amazing. I used 5 mild italian sausages that I took out of their casings before browning. I was a little short on celery (maybe a 1/4c) so I threw in a 1/2tsp or so of celery salt. I didn't have stewed tomatoes on hand so I used two 19 fl oz cans of Aylmer Accents petite cut tomatoes with spicy red pepper and one of those cans filled with chicken stock. I still can't believe how good the flavour was, it had a nice bite to it but not too spicy that my kids wouldn't eat it. Very good and will definitely be making again. It was wonderful on a cold rainy summer day.

Zucchini Puffs

These were ok, they could have used a bit more flavour as they were a little bland, but they fried up nicely (used a deep frier), next time I might throw in some italian seasoning and a few other spices which I think would make them very good. I also didn't use a buttermilk baking mix, I just used a regular one which might be why there wasn't as much flavour as was supposed to be.

Zucchini Cookies

this is a very good cookie for being made with zucchini. I made it exactly as the recipe states, except I probably only left the dough in the fridge for 1/2 hour before baking them. They didn't spread too much at all they rose up nicely.

Chocolate Zucchini Cookies

These were a good soft, cakey cookie although a little bland. I was a little concerned at first as the batter was extremely dry before putting in the zucchini, but after stirring the zucchini in for a while it became moist and was easy to drop. Next time I would cook them a little longer as the middle was still a little undercooked and I would also use the small grater size rather than the big one.

Slow Cooker Taco Soup

Made it as dirceted except for the diced tomatoes with green chilies as we couldn't find any at the store, it was very good but didn't have enough heat and was more like a "stoup" (inbetween a soup and a stew). Everyone liked it though just needed a bit more heat and maybe a little bit more liquid.

Strawberry Chocolate Mousse Cake

I slightly increased the measurements as I only have a 10 inch spring form pan, but this was very good. Everyone enjoyed it, it had a very rich texture and flavout. Definitely will make this again. I want to try it with white chocolate and raspberries....
