Just a housewife on the constant lookout for easy and quick recipes with things that I already have in the pantry.
My favorite things to cook
I bake and decorate wedding cakes for friends and friends of friends when I have personal time that allows. I love to cook Mexican most of all thus far, because the spices make that cuisine have such life. I have recently eaten Indian food for the first time. (I know, I know, I'm sheltered! But I am from a tiny town where farm animals nearly outnumber people.)So I am obsessed with the idea of trying my hand at Indian cuisine as well!
My cooking triumphs
I have developed an easy and spicy fried chicken recipe that I am thinking of sharing. I'm so proud of it!
My cooking tragedies
I made an Amish cornbread but forgot to put the rising and leveling agents in it.... :/ It was a flat, round brick..

Delicious Ham and Potato Soup
I doubled the servings because I just knew by the ingredients that it had to be good enough for leftovers. Sure enough, my husband had a bowl for a late night snack and we had it for lunch the next day. I have never found another recipe that was this creamy. Next time I make it, I have decided to try the leftovers as a pot pie by adding some frozen corn, green beans and carrots in with it and putting it into a casserole dish lined with pie crust and cover it up with pie crust. I almost can't wait! In a one-word rating : DELICIOUS!

Bacon Wrapped Water Chestnuts II
My husband absolutely loved them. I drained the grease three times and used lower sodium bacon to make us feel a little bit better about being so naughty.

Baked Macaroni and Cheese III
Coming from a person who never salts anything but boiling water, I found this a little bland and so did my husband. I followed the recipe in it's original form and even with the cheeses having so much salt it just didn't have much flavour. I am a mother of a newborn so I suppose it is possible that I left something out, but I really can't think of what would have went wrong. I will try this one more time with a few of the suggested alterations though!
