Make Ahead French Toast

Is it possible to ruin this?? I didn't have Texas toast, so I layered 2 slices of whole wheat bread. I didn't have half & half, so I substitued buttermilk. I forgot to add the milk in the mixture for the first few pieces, so they soaked up a lot of the egg, and the remaining pieces were VERY milky. I used a little non-stick spray because it was almost gone. It was FABULOUS!!! No sticking, not soggy--perfect! This will be a weekend staple in our house!

Grilled Chicken and Angel Hair Pasta

A great base for a wonderful meal!! I was looking for a recipe similar to a dish I had at a restaurant, and this was pretty close! I sauteed garlic in olive oil, cooked chicken in oil, removed cooked chicken, then added about 3 c. broccoli florets, 6 oz. sliced mushrooms, and 1 pint cherry tomatoes to the oil. Cooked these for 5 - 7 minutes, and combined with chicken, pesto & cooked pasta (I used whole wheat pasta). I'll be making this often!!

Four Cheese Margherita Pizza

WOW!! This was EXACTLY what I was looking for! I was a little worried because I used veggie cheese (a mozzarella/parm blend) instead of the mozzarella and fontina called for. And I used fat-free feta. I was willing to trade off some flavor for less fat & calories--but I didn't have to--it was FANTASTIC! Will make this again and again. Made it with homemade whole wheat pizza crust recipe from allrecipes.com. THANK YOU!!!

Apple Banana Cupcakes

There aren't enough stars! WOW! I used a little more bananas (about 1 1/2 cups) and apples (4, chopped, not shredded due to previous reviews) because I had a lot of fruit I needed to use up. I topped these with cream cheese frosting I had leftover from making red velvet cupcakes. They are seriously the best muffins I have ever had. And the smell coming from the oven makes you float! THANK YOU BARBARA!!!

Grilled Bacon Jalapeno Wraps

LOVE THESE! I looked up the recipe because my friend made them and we couldn't stop eating them. He makes them with maple-flavored bacon, and OH MY GOODNESS, the mixture of hot and sweet is amazing. I highly recommend that substitution. And great idea in the other reviews about refrigerating ahead of time to avoid the cream cheese leaking out! Thanks!!

Too Much Chocolate Cake

WOW! This is serious chocolate! I took another reviewers tip and used 1/2 cup brewed coffee rather than the warm water, and this cake was everything I hoped--SUPER rich and chocolatey. I topped it with the Satiny Chocolate Glaze, and served with a big scoop of vanilla ice cream. Heavenly :)

Baked Pork Chops I

This was great! Just what I was looking for... I made it according to the recipe, except I only baked 35 minutes as other reviewers suggested, then the additional 30 with the gravy on top. They were definately done. Thanks for the recipe--I'll be making it again!!

Cream Corn Like No Other

WOW! I make a cornbread that uses creamed corn, and I didn't have any cans--so I thought I'd look for an easy recipe with items I had on hand. This is FANTASTIC! The only substitute I had to make was skim milk for whole, but it was still so good. I couldn't stop "testing" it, until I was afraid I wouldn't have enought left for the cornbread! I think I will have to use this in my recipe every time now!! THANK YOU!!

Mashed Potato Cakes

Wow! I rushed through this recipe, barely reading any of it except the ingredients--I mixed everything together (except the butter and the hot sauce), substituting dried minced onion flakes for the onion, and added a little Parmesan. THen put the butter in a skillet and read the recipe--oven? Oops! Oh well, I had already started in the skillet, I would just try it. It was great!! They held together perfectly and were light and crispy and melt-in-your-mouth good. This appears to be one of those recipes you can't mess up--even when you're in a super-big hurry! :)

Chocolate Mint Cookies I

WOW! These are probably the best cookies I've ever made. They melt in your mouth. I would HIGHLY recommend a standing mixer for this one--the dough had my hand mixer smoking! But they were definately worth it!

Creamy Portobello Mushroom Tortellini

I didn't care for the flavor of this dish. I thought it was bland, and I didn't like the flavor of the mushrooms mixed with the alfredo. I like all of the ingredients, so I was surprised. If I were to make it again, I believe I would prepare the mushrooms as described, but toss pasta with chives and alfredo only and then top with mushrooms.

Chicken Verde Casserole

WONDERFUL! I cooked my chicken in the crockpot the night before using 2 cups broth & a packet of taco seasoning for about 6 hours on low (from Flylady recipes)--I LOVE the flavor and the chicken practically falls apart and shreds on it's own! We really liked the kick of the salsa verde. I was able to make one pan for our family of 4 and share the other. Will definately make this one again.

Chocolate Cavity Maker Cake

Wow! I couldn't believe this cake was good enough to not need a glaze, but it definately was! Instead of the coffee liqueur, I used milk, instant coffee granules and a little chocolate syrup. A chocolate lover's dream!
