Carol's Chicken Salad
This is the best chicken salad I have ever had, I think it's the poultry seasoning that really gives it a wonderful flavor. I add chopped cashews and crasins to it. Great on it's own or in buns - Hawaiian bread is great with it, too!

Burrito Pie
Wow. Yum, yum, yum. My new favorite!!! I almost licked the plate! Very easy, too. I changed a few things... I used corn tortillas instead of flour just because I like them better (I think it makes it taste more authentic mexican) I left out the olives because my family doesn't like them. I used Rotel with green chilies and instead of a can of refried beans, I used Frito Lay bean dip which has more flavor. I also didn't have taco sauce so I just used salsa. It was wonderful!

Candied Sweet Potatoes
This was absolutely the best sweet potato recipe I've ever tried. My whole family loved it. I cut the time in half by buying diced potaotes in a microwaveable bag. It oly took 4 minutes to precook them. I also added a little coconut and chopped pecans while I sauted them in the butter mixture. Yum!
