Simple White Cake

Super yummy!! I didn't have a problem with my cupcakes being dense at all. They were fluffy and lovely. I didn't overmix after I added the flour mixture, so I think that helps. Also, I saw no need for extra milk. This recipe makes more like 18 cupcakes, not 12. If you use it for 12, they'll seriously overflow. Bottom line: Yum, yum, yum. Amazing.

Mexican Baked Fish

Great recipe! A super easy way to sneak fish into picky eaters like my kids. I called it "fish nachos" and even my pickiest eaters gobbled it up. I made it with some really mild salsa, but it could be as hot and flavorful as you choose. Thanks!!

Ginger-Lime Chicken with Coconut Rice

Pretty decent, overall. I did notice that the chicken wasn't about to brown with all the juices and the marinade, so I had to drain it several times as I cooked it. Also, the ginger seemed to give it a slightly powdery texture, which I wasn't too fond of. I browned the coconut in a little butter before I sprinkled it on at the end. I think it was a great touch. Pretty tasty, and a good dish overall. I'll make it again, and try tweaking it a little.

Chicken Milano

EXCELLENT!!! I can't say enough good things about this dish. My husband said it was the best pasta dish he's ever had, hands down. Every member of my picky family gobbled it up. I made a double batch for my family of 7, and combined it all into the skillet at the end. I coated the pasta with half the sauce, and added a spoonful of cornstarch to thicken the remainder of the sauce before spooning it over the individual servings. Love it, love it, love it!

Pumpkin Pancakes with Nutmeg Whipped Cream

Zesty Tilapia with Mushrooms

Overall, very good! However, our attempt at this had a bit too strong of a citrus flavor. I think that could be eliminated by specifying a quantity of lime juice, not just "juice from two limes." I think we just juiced our limes too well! :)

Good Old Fashioned Pancakes

SOOOO yummy!! I added a little extra sugar and about 1/4c of water (I'm not a fan of really thick pancake mixes). These are the best pancakes I've ever eaten - and my 58 year old mom says the same thing!
