Pork Tenderloin alla Napoli

This was quite good and easily prepared. Wanted to share how we used the leftovers for a completely different and equally tasty main dish. Let me start by stating that, I at least doubled the sauce ingred. and used a can of diced tomatoes. Tonight, I diced the remaining pork and sauce with a 1/4Cup of broth over med-high heat until sauce reduces and covers the hot meat. Place on prepared tostada shells, w/ layer of refried beans, rice, shred cheese (we broiled pepper jack/cheddar over meat/shell before adding...)...fine shred lettuce or cabbage, avocado, tomato, black olive and topped with a sweet wine vinegar dressing and salsa. Baked Cod with Boursin Herb Cheese

Tasty. I added saute' of thin slice bell pepper, onion and mushrooms (4-6 min), Can't help myself I added more garlic to the above. I also made my own Boursin Cheese. Layered-fish, saute', Boursin, tomatoes, parm.. No butter drizzle. Broiled 3-5min Thank you for the new recipe!

Zucchini Spice Cake

This was moist and quite good. I did cut the sugar by a half cup and added about a tablespoon of maple, oh, I also ended up w/ over 3 cups of zuch and all went into batter-was fine. We topped w/ 'lite' cream cheese frosting. I think I will top next one w/ broiled coconut frosting as it didn't occur to me until we were eating it. really, frosting not needed as cake is quite moist. Thank you for sharing.

Sauerkraut Meatball Soup

My husband and our neighbor's really enjoy sauerkraut however this was a bit overwhelming and apparently a little harsh on the GI Tract for all involved... Unique, and maybe not as the main course would have been alright...? for the three who we served, the recipe could have been halved, plenty of leftovers (for 3)...still in freezer... I appreciate your sharing and we will continue to try new and unique dishes.

Maple Salmon

essentially teriaki base. We added a full teaspoon of crushed chili pod w/ seeds-still very sweet glaze overall. It was good. Apreciated the suggestions to use of foil! Thank you for sharing.

French Bread Rolls to Die For

I am new to bread making and these were a big hit with the family. My only problem was, the damp cloth...the dough balls stuck to the towel. They weren't ruined but several lost some shape. I will learn...thank you for sharing.

Blueberry Zucchini Bread

These are good. I poured batter into 1-loaf and 1-pan lg. muffins. Used a crumb topping as suggested. i also increased the zucchini by 1-Cup. I used fresh-frozen blueberries, they held up well. I have the muffins frozen individually for quick access. Thank you for submitting this recipe.

Cheesecake Topped Brownies

These were yummy. I actually forgot to add the egg to the cream cheese mix...it was late...and they were very good. In fact, since I was fearful they'd be too sweet, I didn't even frost entire pan and the, less attractive-two layers went quicker that the frosted section. Thank you for submitting.

Round Steak Sauerbraten

We enjoyed this. I did doubled the liquids/spices and did thicken the final gravy just a little with 1T cornstarch. I may add an add'l Tbl. of wine vinegar next time but, really quite good.

it was fine. with all of the rich incredients I expected a bit more...something. Couldn't even hint at a taste of cheese-i did mix it in before cooking as suggested-will try again with some modifications. Thank you for sharing.

Tangy Slow Cooker Pork Roast

This was tender, juicy we used it for enchilada and sandwich filling as well as all by itself. I will agree with some others that the spices needed doubling but really the meat was so flavorful in itself too much spice might detract from the wonderful pork itself. That said, the title of the dish is "tangy" and we didn't notice any tang:0) Thank you for sharing.

Chicken Paprika

My first experience with new pressure cooker. Used thighs. I did double the sauce/spices based on prev. reviews. Layered a sliced bell pepper and halved (fresh) button mushrooms along with the onion. Also, just realized that I added a good tablespoon-more of pepper sauce not a dash...It was quite good. Thank you for sharing. We will be serving again.

Eggplant Parmesan II

This was very good. I did "double-dip" the slices. egg to very light flour-back to egg then crumbs. I also used the suggestion to "sweat" w/ salt for 1/2 hour(rinse and pat dry). Baked in high-450 oven for about 7min each side. The eggplant was not mushy at all. I only single layered the pan as I so feared it would be mushy (what I remembered of egglpant as a kid). It was quite good. We used leftovers for italian sandwiches on toasted rolls. thank you for sharing. I will try other eggplant recipes based on this one.

Pumpkin Bread IV

Wasn't as moist as I'd hoped. Slices nicely. Made enough to share and was good, just not great. Would have been smart to have a spread/sauce. Butter does not work and the cream cheese spread I made was still overwhelming to the bread itself.

Sea Bass Cuban Style

Used fresh Rock Cod and it was really good. The only real alteration was to lightly coat in (sifted) flour and par fry first. I didn't have any fresh cilantro so used "fresh" paste. It was very flavorful dish. Thank you for new fish idea.
