I graduated from Western Culinary Institute in 1994. I have worked in restaurants, private dining and catering since graduation. I believe there is a place for the elegant, haute cuisine and the casual diner food. I can appreciate greatness in any style.
My favorite things to cook
I have cooked so many wonderful dishes I could never come up with only a few favorites. I love many different ethnic cuisines. I love the high-end fine dining cuisine and the down-home old-fashioned food my grandmother would make--and everything in between.
My favorite family cooking traditions
My family is from Alabama and Georgia so even though my culinary training is classical French, my heart is still in the Deep South.

Vanilla Ice Cream VIII
Wow! This is an excellent rich but not heavy classic no-cook, no-egg recipe. It's the recipe I remember eating when I was a kid and we would make homemade ice cream in the big machine packing the outside with rock salt and crushed ice. It doesn't get any better than ice cream with a 3-ingredient list. I also substituted some half and half for the milk which made it just a bit richer and creamier.

This is an excellent gelato recipe. You definitely taste the rich egg custard so it is well suited for the richer flavor additions like chocolate, coffee, etc.

Raspberry Oat Bars
I prefer blackberry jam and I really like this recipe. It comes out crispy and it reminds me just a little of pop tarts, but healthier.
