Bread Machine Rolls

Amazing! I have made these rolls at least a dozen times in the last month. They make the best hamburger,hotdog and hoagie buns. We have not purchased our own since! I do half bread flour half whole wheat. I have also used evaporated cane juice crystals in place of the sugar when we ran out of regular sugar with the same success. The recipe is absolutely perfect as it is! When doing hamburger and hotdog buns I make about 9 even size buns. Dinner rolls about 12. Sometimes I use the egg wash, sometimes I do not. The egg wash does add a nice sheen and a wonderful smell but is not neccesary. I cannot say enough about these! So easy and oh so good!

Sauteed Swiss Chard with Parmesan Cheese

My favorite recipe for Swiss chard. It is quick and easy to make, ingredients are on hand, and is very flavorful and healthy. My husband and I both love it while my kids think it is okay.

Quinoa Pudding

This is really good. I substitute canned coconut milk (Thai) and use xylitol for the sweetener. It is a great dessert and a yummy breakfast. I prefer my puddings cold and can hardly keep myself from sneaking in the fridge. I have also made it before adding an egg to the final 2 minutes of cooking. Yum!

Zucchini Brownies

These brownies are delicious! I have made them many times. They are great using a gluten free flour mix too! I usually only use 1/2 the sugar. I have also used coconut oil or olive oil in place of the vegetable oil and it is still wonderful! Sometimes I add more zucchini as well. Yum!

Last Minute Pretzel and Chip Dip

Our favorite dip and oh so easy! The recipe uses what most of us have in our refrigerators at any given time. I also from time to time will substitute plain yogurt for the sour cream and lower fat versions of the other ingredients and it still tasted great!

Tomato-Curry Lentil Stew

Have made this several times and my husband and I love it. The recipe is great as is but I made a few changes for our taste. I cook the garlic and onions in olive oil before adding it and it really seems to bring out more flavor. I also use chicken broth instead of water and omit the celery because I rarely have it on hand. Sometimes I add chopped cooked carrots and/or cooked potatoes. I serve it with homemade wheat bread and it is such a huge treat on a cold night!

Autumn Harvest Cookies

This recipe was fantastic! The perfect recipe for a fall treat! I made this for a women's only gathering although my husband and kids loved them also. I had to make a couple changes for dietary reasons. I made them with gluten free flour. I also substituted xylitol for the white sugar, and substitued 1/2 cup pureed pumpkin for 1/2 the butter, then added two more tablespoons of butter. Usually gluten free can be dry but these were very moist. They were a tad bit cake like because of the substitution of the flour. I know that these substitutions can change a lot but I wanted to hopefully help someone who was wondering about making these gluten free and lower glycemic. Go for it-they will not disappoint! These had the perfect sweetness to them and are great with coffee!! I will be making again and again. Thank you for sharing this wonderful recipe!

Taco Pizza

Very good! I also used my own pizza crust but the toppings are perfect. I fried the onions and browned the beef in the onions as my family prefers them that way. Other than that, I followed the recipe exactly. A keeper for sure! We also liked it after adding lettuce, sour cream and tomatoes on our pizza slices.

Wheat-free Oatmeal Banana Pancakes

I have made this several times now and I love it! It is such a treat for me who has food allergies to be able to enjoy pancakes with my family. Other flours should work well too but I always seem to have sweet rice flour on hand. I'll update once I add other flours. I think I'll try almond flour next!

Fantastic Black Bean Chili

This is so good! I followed the recipe almost exactly except using dry beans that had soaked overnight. I also added some chicken broth to get the desired thickness. I served with sour cream and chedder cheese as well as corn bread. This is a keeper. My children ages 4 and 5 ask for this. I am making it again tonight and my babes are excited! Thanks for such a wholesome recipe!

Seven-Minute Pudding

Yum! This was sooo good! Made 4 perfect size servings in small wine glasses. I also cooked mine on a stove. I first blended all ingredients except butter with my mixer as I melted butter on the stove, being careful not to burn it. I then poured the ingredients into the pot with the melted butter and stirred almost constantly over medium heat about 5 minutes until the entire mixture was thickened. I poured into glasses and placed in the fridge to let set. This was heaven on a cold and rainy movie night with the kids and my hubby! This was great warm and cold! This will be my pudding recipe from now on as I can see how it could easily be used for filling and modified for different flavors. So easy and so good!

Chewy Brownies

Impressive recipe! We were wowed with this one. So moist and chewy. I think others with cakelike and dry results must have overbaked. I take mine out when I think they could use a minute or two more just to be sure they do not overbake, then they finish baking themselves out of the oven. A few changes to make it a little healthier. I used 1/2 and 1/2 unbleached bread flour and whole wheat bread flour, honey instead of corn syrup, and olive oil in place of vegetable oil. I sprinkled chocolate chips on as soon as the brownies came out of the oven too. Great recipe. Next time I will cut sugar down a little by omiting 1/2 cup, and using applesauce in place of oil. We will be making this again soon! Thanks!

Pear Banana Berry Bake

This is excellent! A perfect blend of flavors. I used two very ripe large pears instead of canned as we needed to use them up, frozen cranberries and whole wheat flour instead of white all-purpose. I also doubled the topping as we are topping fans. May try some cinnamon next time too. Super good. An easy one for young children to help out with. Mine loved slicing up the bananas. We will definitely make again soon! Thanks Shannon for the easy and tasty recipe!

Truck-Stop Buttermilk Pancakes

The absolute best pancake recipe ever! If you are looking for the kind of pancake that you get at the best breakfast places, this is it. Finally! So easy to make. I do half all purpose and half whole wheat flour but other than that I follow the recipe exactly. It is perfect as it is but adding a few chocolate chips makes them even more irresistable. I have also tried nutmeg and cinnamon as well. So yummy! I am the only one in my family who even puts maple syrup on them. Everyone else eats them with only butter. This recipe makes a lot. I halve it and it is more than enough for my hungry family with leftovers.

Beef Fried Rice

This was great! I was a bit skeptical in the amount of flavor it would have but it was very flavorful. I did not add sugar, but did add finely chopped carrots and some frozen spinach. A very simple recipe that can be modified by using what is on hand. Will definitely make again and again! I

Mom's Ginger Snaps

These are the best ever! So soft and chewy! I have made this recipe about 10 times now. I am asked to bring these to our holiday gatherings a few times each year. I make it exactly how is is written with the exception of using olive oil because that is what we always have in the house. I have also made gluten free version with great success. I make them small, about 2 inches in diameter. They are soft and chewy and slightly thick in the center if the dough is refrigerated slightly before rolling. If the dough sits out too long they can come out a little flat. These freeze well but nothing beats a fresh one!

Honey Of An Oatmeal Bread

We thought this was okay but way too sweet for us, even for our children who love honey. I must say that the texture was superb which is why I am giving it three stars. It was much better as toast.
