Classic Waffles
I have made this recipe many times. We all really like it as written but when we whip the egg whites and fold them in at the end, the results are outstanding! I also add in almond extract, and prefer this recipe with gluten free flour-makes them crispy on the outside. So with these changes we would give it 5 stars.

Soft Sugar Cookies V
Finally found a keeper! Exactly what I have been looking for. These rolled out like a dream. Most other roll-out cookies are simply way too sweet to add frosting to. These are perfectly sweet to eat on their own, but not too sweet so you can add frosting, glaze or sugar crystals and it will not be too overpowering. They baked up thick, soft and hearty. Not a single broken one! I did add 1/2 tsp of almond extract in addition to the vanilla extract to add more flavor as others suggested.

Mom's Ginger Snaps
These are the best ever! So soft and chewy! I have made this recipe about 10 times now. I am asked to bring these to our holiday gatherings a few times each year. I make it exactly how is is written with the exception of using olive oil because that is what we always have in the house. I have also made gluten free version with great success. I make them small, about 2 inches in diameter. They are soft and chewy and slightly thick in the center if the dough is refrigerated slightly before rolling. If the dough sits out too long they can come out a little flat. These freeze well but nothing beats a fresh one!
