French Tartiflette

Used a whole pound of bacon, but other than that made exactly as directed and was it ever wonderful! Husband took leftovers to work the next day for lunch and everyone asked what he was warming up since it smelled so good. Thanks!

Sweet Corn Cake

I made this with a can of creamed corn instead of frsh corn and left out the cream. I also did not like the texture when I removed it from the oven so I left the foil off and put it back in the oven in the water bath for another 30 mins. Nice and crumbly but firm with a fantastic crust on top! I will be making this a lot!

Easy Dump Cake

Simply the best! Used plain yogurt instead of sour cream but there was no tangy yogurt taste so that worked out well. The flavors here would be easy to change with different puddings, chips and yogurt flavors for a lot of diversity. I melted a jar of carmel frosting over the top. Delicious!

Grilled Lamb Burgers

These were wonderful! One tiny change - i didn't use the sherry. Other than that i made them exactly like this and they really were amazing. Moist and tender and flavorful. They smelled so good and tasted even better. THANKS!

Grilled Leftover Ham and Pineapple Sandwiches

Don't be fooled by how simple this sandwich is, it's fantastic! I used whipped cream cheese to keep from tearing up the bread but other than that I made them exactly as written. Served with the Topical Salad from this site which also has pineapple in it and it made for a wonderfully flavorful and light sandwich and salad dinner. Thanks!

Tropical Salad with Pineapple Vinaigrette

Made with canned pineapple instead of fresh and used a red onion in place of the green onions to add a bit of color. Also added garlic and red pepper flakes to the dressing. This was so good I made the recipe amounts as written for 6 and 2 of us ate it all! Served with Ham and Pineapple sandwiches from this site. SO GOOD!

Salisbury Steak

SO GOOD! I used some leftover homemade french onion soup (from this site) and from now on whenever French Onion Soup is on the menu, 2 days later this Salisbury Steak will be also! Easy, quick and tasty. THANKS!

French Dip Sandwiches

Baked Flan

So quick, so easy and SO GOOD!!! Just a few notes, I used evaporated milk instead of whole milk just because that's what I had on hand. Worked out just fine. Make the cream mixture first then set it aside to make the caramel, that way the carmel doesn't have enough time to set up hard before you pour the cream over it. I used a plain wire whisk to beat the cream mixture so it took some work but turned out perfect. I put a large loaf pan in the bain-marie and put it in the oven while it was preheating so the pan was nice and warm when I took it out to add the carmel and cream. Baked for and hour and a half. I read it over on the Mexico International page on this site that a woman there turns her flan out as soon as she can comfortably hand the pan so that's what I did. I removed the loaf pan from the bain-maire and let it cool for about 10 mins on a wire rack, ran a small knife around the edges and inverted onto a platter. Turned out perfect without a single drop of carmel left in the loaf pan, a creamy carmelized top on the flan and a beautiful little puddle of carmel all the way around the flan!

Mama's Italian Wedding Soup

This soup is so good! Yes the meatballs are a little labor intensive but if you make them all first before you do anything else you just need to drop them in and let them go. I did add extra breadcrumbs and Parmesan to the meatballs as well as using Italian flavored breadcrumbs instead of plain. Poaching the meatballs in the broth with out any previous browning or baking gave the broth all kinds of flavor. This is going into regular rotation. THANKS!

Chocolate Lovers' Favorite Cake

Best chocolate cake I ever made! Used 3 9" cake pans to make a layer cake instead of a Bundt. I didn't want it to be overwhelmingly chocolate so substituted 2 cups of crush almonds for the 2 cups of chocolate chips. It added something different and really made it a treat.

Mandarin Almond Salad

One Bowl Chocolate Cake I

Seriously good! Don't be put off by how wet the batter is, it bakes up beautifully. I used this cake as the chocolate part of a marble cake and it was wonderful.

Rolled Buttercream Fondant

Finally a fondant that doesn't taste like Play-Doh! Didn't have any problems kneading it since I was using my Kitchenaid. Makes up fast, takes color well, quite easy to work with. Be sure to use an ample dusting of confectioners sugar when you are rolling this out since it is a bit oilier than regular fondant, but that little concession is easy to do when you get a great looking cake as an end result.

Curried Cashew, Pear, and Grape Salad

Oh my gosh is this good! I did make a few changes. I left out the bacon as it seems a bit too much here. I melted the butter in a small pan then added the cashews, curry powder, brown sugar and cayenne. I substituted fresh basil for rosemary,then let it all come together. The kitchen smelled heavenly! Also added a bit of chopped fresh basil to the salad so every few bites you get this hit of basil with grape or pear. Please give that a try, it really is fantastic. This is going in regular rotation and can't wait to spring it on my MIL!

Pie Crust IV

Pie crust has always intimidated me. I've always heard how hard it was to make it right - and if you didn't make it right it was just awful. Well no more fear for me, this pie crust is easy to make, easy to work with, and is absolutely wonderful! Thanks so much, I'll never buy refrigerated pie crusts again.
