Grilled Leftover Ham and Pineapple Sandwiches

Don't be fooled by how simple this sandwich is, it's fantastic! I used whipped cream cheese to keep from tearing up the bread but other than that I made them exactly as written. Served with the Topical Salad from this site which also has pineapple in it and it made for a wonderfully flavorful and light sandwich and salad dinner. Thanks!

Dilly Cucumber Salad

SO GOOD! I added a pinch of celery seed to the marinade and it really did deliver a nice depth of flavor. I've made this twice now, once marinating for a few hours and once marinating over night. The overnight marinade made a dramatic difference so I will be sure to do this the night before from now on. The sour cream is just enough to soften the strong tang of vinegar and dill without adding another strong flavor that competes with the nuances of the marinade. Served with french onion soup and fresh french bread for a nice light Saturday night dinner. THANKS!

Easy Dump Cake

Simply the best! Used plain yogurt instead of sour cream but there was no tangy yogurt taste so that worked out well. The flavors here would be easy to change with different puddings, chips and yogurt flavors for a lot of diversity. I melted a jar of carmel frosting over the top. Delicious!

Cucumber Sandwich

This sandwich just doesn't taste like much og anything. I changed so much to make it better that effectively I made a different sandwich. Toasted the bread, used herbed cream cheese, used broccoli sprouts instead of alfalfa, added red onion, used balsamic vinegarette and mustard.

Peach Upside Down Cake II

The real problem I had with this cake is that it tasted sweet, but didn't tase like anything else. The brown sugar/butter mixture overwhelms the peaches and the the orange juice and zest in the cake is so sublte as to be nonexistent. Basically, this cake tasted like nothing. Cake rapidly overflowed the pan, but since I had a 9x13 underneath I didn't make too much mess. The problem came when I tried to invert it onto a plate and it fell apart. Still, we thought it smelled great so we tried to eat it anyway despite how it looked and were sorely disappointed.

Sweet Corn Cake

I made this with a can of creamed corn instead of frsh corn and left out the cream. I also did not like the texture when I removed it from the oven so I left the foil off and put it back in the oven in the water bath for another 30 mins. Nice and crumbly but firm with a fantastic crust on top! I will be making this a lot!

Famous Hot Fudge Topping

This recipe is worth every single calorie! Yes it is rich and sweet, but you also don't have to use as much as other toppings to get extreme flavor. It took me back to sitting at the fountain counter at Sanders as a kid. Thanks so much!

French Tartiflette

Used a whole pound of bacon, but other than that made exactly as directed and was it ever wonderful! Husband took leftovers to work the next day for lunch and everyone asked what he was warming up since it smelled so good. Thanks!

English Trifle to Die For

The name is right, this Trifle IS to die for! And it really is easy to make too. I used a store bought Lemon pound cake, doubled the Custard recipe, used Strawberry jam and strawberries instead of raspberries. Still, those changes are relatively minor and this is a very well deserved five stars!

Cream of Coconut Cake

Unbelievably good. I made this for Easter and it went down a treat. Be sure to get Cream of Coconut. It's in the drinks aisle of your supermarket, it is used to make Pina Coladas. Anyway, don't think you can sub out coconut milk because it's nothing like it. Also the can of Cream of Coconut I got 16oz so after I used it in the recipe I brushed the extra on each layer before frosting. Made for a bit of extra flavor as well as keeping the whole thing incredibly moist. I made a 3 layer cake (there is more than enough batter here to do that with) and I toasted about a 1/2 cup of the shredded coconut and sprinkled it evenly between the layers and on top.

Pork Medallions with Dijon Sauce

Really fantastic! I doubled the sauce to have extra to put on rice, and added a bit of fresh flatleaf parsley and rosemary. I think I will be serving this to my mother in law when they visit, and THAT'S saying something!! LOL

Peanut Chicken Salad
