Paul's Pumpkin Bars

I made this twice and enjoyed it thoroughly both times. Both times I put it in a 9x13 afraid that the jelly roll pan would be to small. The texture of this is more of a cake then a bar. I don't think that using a jelly roll pan would change the texture to much. The cream cheese frosting I made as is, then I tasted it and decided to add the rest of the cream cheese for a total of 8oz as well as some extra vanilla (yum). The frosting was delicious!! For experimental purposes I would try using applesauce instead of the oil and in lieu of all white flour I would try using whole wheat flour. Thank you for the recipe, it is very tasty.

Slow Cooker Chicken and Dumplings

I have now made this twice and changed it the second time. I never do this but I'm doing it for the benefit of those who would like feedback and for the sake of the dish. The first time I made it as is, it was okay and wasn't sure if I would make it again. I give it a 3/5 as is. However, I did change it and used this as a base recipe. I seasoned the chicken with salt and pepper, added chicken broth in lieu of water and 2 chicken boullions, I also added celery and carrots during the cooking process. About 1 hour before it was ready I also added frozen corn and peas. My least favorite part of the dish the first time was the refrigerated biscuit dough. So, I used a recipe from allrecipes for Dumplings by Carol and they were amazing. Thank you Carol's mother!!! Had a little bit leftover and to my surprise it was even better the next day including the dumplings. There is a lot you can do with this recipe but be sure you use real dumplings!!! Be creative with it and enjoy!!

Ricotta Cookies III

Cut the recipe in half and followed it exactly. They are excellent! Very light, airy and cake like texture. I had anticipated that from the ingredients and the reviews. No disappointment here. Will make these again and they have earned a place on my christmas cookie list. I may use almond extract in the glaze next time instead of lemon, although the lemon was perfect for these cookies. Enjoy!!

Blonde Brownies I

These are soooooooo good and easy!! Instead of a 9x9 I used a 8x8 which was perfect. I think the 9x9 would have made them to thin. I mixed some chocolate chips in and added the rest on top. Amazing! Would make a really good brownie sundae too. Enjoy!

Banana Crumb Muffins

Made them as is and they are wonderful. I sifted the flour and it gave the muffin a light and airy texture. May make with walnuts next time around. Excellent!!

Blueberry Buckle

This was easy and quick. To eat and make!! Only change was a personal preference which was using butter instead of shortening. The only issue I had was having to use more milk then what the recipe called for. I probably added at least a whole cup of milk. Baked it a little longer and it was perfect. Enjoy!

Stuffed Green Peppers I

Made these last night and was pleasantly surprised with my end product. I thought they were easy to make and flavorful. I used 1 1/2 lbs of lean ground beef and it was just enough for 6 peppers. For more flavor I would use ground chuck or a 85% lean ground meat. I also used a can of already crushed tomatoes and it worked well, bascically to cut back on the time. Of course I added extra cheddar cheese which topped them of perfectly. This was my first attempt at stuffed peppers and am satisfied with the flavor, ease of preparing them and relatively inexpensive to make. Completely satisfied. Enjoy!!

Spinach Brownies

These are excellent. I only used (1) 10 oz package of frozen spinach by accident, added feta and left everything else the same. The feta added a little extra kick. My 'spinach brownies" would have been thicker if I had used (2) 10 oz packages of frozen spinach. However, they were perfect in flavor and texture as is. The original recipe would not fail either. Simple, quick and delicious. Enjoy!!

Cake Balls

Did not like these at all. I would recommend freezing them overnight which certainly helped in dipping them in the confectionery coating. I did not care for the gooey cake part at all. Not worth the time and the effort.

Chocolate Mint Cookies I

Made these exactly as stated and they are delicious! I chilled the cookie dough which is needed. They came out moist and soft. A great substitute to mint chocolate chip cookies. Enjoy!!

Best Brownies

Made these twice. Much better the 2nd time. The difference was baking them for only 25 minutes versus 30 minutes which made them dry and cake like. If you like fudgy and moist brownies don't over bake!! Yummy!
